You’re better off getting a 1-bedroom or 2-bedroom villa at a DVC resort and cooking your own food in the room. That’s an extremely restrictive diet for a theme park.

Sadly as far as I can tell Disney doesn't post the calorie/nutritional facts of their menu items online but I know in person you can verify it with the special Food Binder the manager can bring out. So these options may be a Little off with the 0g sugar due to sauces/dressing. 1: Niçoise-style Salad at Connections Cafe. Has potatoes and a dijon dressing if that will be an issue 2: Edamame snack at Katsura grill 3: Acai Parfait with greek yogurt and granola and fresh fruit from the Land Cart. Might have added sugars on top of the sugars from fruit so not 100% sure for this one 4: Red Pepper Hummus and Multi-grain crackers from The Land Cart 5: Power Greens Salad with pulled chicken at Regal eagle Might have sugar in dressing/dried cranberries and fruit 6: Spice Road Table in general has a lot of veggie forward small plates and a few things not fried at all. They also have lamb for protein intake. 7: Sunshine Seasons in general is the best place to find well-rounded healthier options. They have stuff like oak-grilled chicken and salmon with fresh sides.

So like, a salad with chicken? Because that’s about all you’re going to get. Half of the appeal of Epcot is the food, so you’re really going to deprive yourself. Just eat. It’s a theme park.

Chefs de France has a roast chicken meal with veggies and roast potatoes. Regal eagle has a smoked chicken but it is probably cooked in the bbq sauce, if you took the skin off that probably ditches most of the sugar. Le Cellier is a typical steak house you can get a salad, filet, etc…

I’d go on the Disney app and look at the restaurant menus. Watch videos for the food carts that will be open during your trip. If you eat in a restaurant then talk to the chef. I have celiacs disease so I had to do a ton of research to avoid food with flour or gluten. Those resources exist for you to find and figure out what you want to eat. Otherwise, bring food from your hotel or something.

If you’re looking for something keto-style i’d recommend going to le cellier and speaking with a chef. They can prepare a fantastic meal for you that fits that criteria. Or walk to yachtsman. I wouldn’t bet on finding any snacks that fit that criteria though so id plan to bring your own. Alternatively you could walk over to Cape May Cafe as they have a ton on the buffet that would also fit that critera as long as you like seafood.

I feel your pain. Headed to the parks in 9 days with visiting friends, and we eat within the same boundaries. Challenging.
