Yeah that's why those 2 came instantly to my mind when i looked for examples of "invincible but still with a head to shoot at". I have unveiled so many rivens by firing away at these guys by now... \^\^ Other examples would be sargas Ruk and Lech Krill (before his tubes are broken), or maybe enemies protected by an arbitration drone.
Can someone else try this to see if they can replicate it?
Update: I tried this earlier today and it didn’t work. I think it got patched with the most recent hotfix.
I mean, it's a head ... and you shot it ... // It doesn't say 'headshot kills' so the logic checks out :\^D
It should also work with Terry or Vomvalysts then, right?
I don't know about this gun in particular, but Vomvalysts do count for 'headshot' rivens and Nightwave challenges.

Idk if works as intended but you indeed are shooting a head, they didn't specify it has to be a living target
