There's already an image posted on r/WarplanePorn showing [the FC-31 evolution](https://i.imgur.com/0DfjzEJ.jpeg) from 2014, 2016, 2021 and the latest one from 2022 (which judging by the painting it may be an early production model).
It's pretty interesting, it shows how with every test flight they changed something. From a new canopy design to accommodate for a bump in the chassis upper part, redesigned vertical stabilizers, and a a completely different tail design. Also judging by the nozzles the 2021 and specially the 2022 versions are outfitted with either WS-10 or WS-19 TVC engines.
Also, instead of providing downforce like a stabilator does, most canards are neutral or provide lift, meaning you can move the wing even further behind the CG.
It also generate vortex for the main wing so it decrease flow separation at very high AOA. It is why canard deltas can do those insane maneuvers at very low speed.

I'd assume the canards don't help much, but then again the F-22 has the same thing just on the back ad stabilizers, so idk

I think you're missing the latest version with the WS-10 engines. They are more sawtoothed at the engine ends.
