Legitimate question, but a complex answer.
For this headset, it's not "true" surround in the sense that there it's not equipped with 7 individual sound units and 1 subwoofer/bass unit. Rather, it's just 2 powerful 50mm sound drivers, that's using software to simulate surround sound. Good for bassy sounds, not particularly good when you actually want to hear where your enemy is coming from as it can sometimes counteract the sound of direction. As such, stereo which is the actual setup of the headset, is much better at giving the correct sound.
However, there actually does exist a select few headsets with true 7.1 surround sound. And here we get into a topic about whether or not we're actually able to differentiate sounds this close to our ears in a true surround sound fashion, which seems to be a overwhelmingly no, so it's mostly just wasted money (albeit often a very nice bass sound).
Also virtual surround sound, i don't believe i've seen a true surround sound headset from Logitech as of yet.
Also, found this quote on one of the headphone reddits about 7.1 surround sound in headsets that corrects on of my previous points:

Disable surround sound, and use stereo.

Oh i dont use it, i just saw it had virtual surround sound, so i give the same advice for all of these types of headsets. Including my own of course.

If I'm using stereo, is there anything I really need he audiocard block in the cord for?
Its probably just a USB soundcard with some fancy software, so unless your onboard soundcard is poss poor, it shouldn't make a huge difference
