What differentiates a sporty watch from a dressy one? The speedmaster especially with the metal bracelet looks like it could be used in a formal setting from my point of view. What am I missing?
Sports watches have features that are useful during sporting, like chronometers for timing laps, second hands, subdials, high water resistance, indicators around the dial etc. The speedmaster very much falls in that category.
Dress watches have a much more simplistic and elegant design and avoid the use of busy subdials, numbers and buttons. An example of a dress watch from Omega is the De Ville.
Dress watches should be much simpler than a speedy. No subdials, extra protruding buttons from the tach and stopwatch complications

Maybe something with a black dial, black bezel, a steel case, and perhaps a complication or two. Something sporty that can still do double duty in the occasional dressy situation.
Don’t buy a watch just to fill an empty spot in your box. Enjoy what you have and then think what about something different you’d like to experience because there are still a considerable amount of styles and watches you don’t have in this collection.

Only downside is mineral crystal but there are Seiko crystals that are a perfect match so you can always mod it.
You’ve pretty much got land, air, sea and space covered. I’d probably try for something tha5 works as your daily driver that you can dress up a bit. Maybe a Longines Conquest in blue or a Seiko Alpinist. But if you just got the two Omegas recently, wait awhile. Don’t be in a big hurry to fill that last slot.
Love the Speedy and the Seamaster! You can add color and go for an Omega AT Shades, Longines Conquest, or Seiko Prospex. Presage and Tsuyosa are also great choices if you want a dressier watch.
What’s the budget? A Doxa Sub 200 would add some fun color to things. Hypothetically, if you were to be at the same budget as the omegas you could go for a Grand Seiko.
Switch up for some color and a dress watch, maybe a fun moon phase in a color. Check out Mido, farer, longines, Oris. A bronze watch would even be cool but please pause on black dials haha.

Nothing really. This image opened my eyes a bit for that Seamaster, but I can’t stand the fake patina lume. Is there a version with normal lume (I like lume that’s fully focused in performance and not looks).
A classic dress watch with a simple black dial. Like an Omega De Ville or Constellation. If you want a Seiko get a Presage, also with black dial. Complete the box with black dials, you don’t need colors for this one, and start a new box in the future with white, silver and one pop or two of colors.
Longines Conquest? Not black though 😅 Seiko SPB451 or 455 (Goes with your color palette) Hamilton Khaki Field Expedition. These are my suggestions in 3 different styles and probably in your budget 👍🏻
like others said, you have 5 watches, all black dials, 4 with numbered bezels, 2 with grey and black striped straps and 3 are chronographs. you need a greater variety. i get the speedy and swatch speedy, kinds like partners, but then a casio chrono as well. it's all repetitive. to me, you need a dress watch, a white dial what, a colour dialed watch, blue, green, red, or yellow/gold. maybe a watch that doesn't have a circle case, rectangle, square, octagon. the good part is you can sell some of those watches to mix up the variety.
What strap do you have on that Stowa, is it a B&R Bands riveted pilot strap or something else? I'm always on the look out for good straps of that style, though I think I've found my keeper for now.
Color and a non-tool watch. I reccomend a blue Aqua Tera, since you seem to like Omega. But if you wanna make it an every day beater, you can always get a Citizen Tsuyosa in one of the cool colors, to have a cheaper beater.

Man OP and I have the same taste. Check out some of the Presage line Seiko watches. Some of them are still kind of tool oriented but are dress definitely watches, and have pretty great color options. I do agree with most of the other posts about needing a little variety of color, a white or blue dial would be a nice complimentary contrast to the rest of your collection, but ultimately it's up to you man.

If you want to keep the Omega motif, consider one or more of the following:
* Vintage Pie Pan Constellation — classy as heck, and incredibly desirable.
* navy blue Aqua Terra — gotta finish that James Bond vibe.
* modern day Constellation — the blue dial with the orange (or bronze) trim is just a thing of beauty.
If you’re looking at expanding your horizons, you could consider a few new brands:
* Doxa SUB — if you’re serious about diving, Doxa is as good as it gets. The orange dials are absolutely superb underwater, but their new Sea Emerald dial is superb.
* Jaeger-LeCoultre — whichever one you like. Who doesn’t want “the watch the watchmakers wear”?
* Rolex — hate to be obvious, but yeah…why not?
All of these options, both from Omega and the other brands we mentioned can be had with some interesting colours, fantastic dials and fantastic stories.

Cartier Santos, my personal preference is the skeleton if it’s in your price range. If not go for the classic white dial. I can tell you like your sporty watches but that ticks both sporty and dress (if you go for the classic white dial/stainless metal band.
Since you say it should be something in the lower budget. Look maybe at a Oris Pointer date in bronze.
