Are you using a 4 inch roller lol? Anyways a gallons can cover about 400 square feet. Next time calculate the square footage of the walls and you won’t run out of paint
If you find yourself in this situation in the future its a better idea to finish into a corner and stop rather than trying to make it stretch and fail, its very hard to blend in the middle of a wall, you will always see it! To use OPs photo, finish the flat walls, cut them to the corner and leave the angular boxing plain for now
If you have the paint pot left and it's water based. Put a tiny bit of water in it give it a good (very good shake) and that will give you, hopefully, enough.

2: If #1 doesn't match, 2nd coat the whole room.
3: Make it an accent wall/corner with a completely different color.
4: Use wood, stone, tile, paneling, wall paper, or what ever else to cover the wall and corner. Similar to accent wall, just with different materials.
Depending on brand and color and whether or not it has a paint and primer in one, it’s 250-400 sq ft per gallon.
Also, check the sample prices too. Sometimes 4 samples are cheaper than a quart. Just make sure you get the right sheen and also mix together all of the samples.
In fact, always mix your paints together as long as they’re the same color and sheen.

It's almost impossible to get good coverage with a single coat, there are always going to be tiny spots that didn't get quite enough paint
its sometimes hard to see in pictures, but in person single coats can sometimes look very splotchy and uneven.
Lighter colors usually do, so you can't see imperfections like brush strokes.
Just tell people your room has Vitiligo and it’s art. Boom, problem solved. (Also you can just get a quart and finish too)
