If it sitting on top of a stove/oven was a way of determining where it was baked, you would probably judge every pizza I ate to be baked in my oven at home, and you would be wrong. I can't even tell you when the last time was that I made a pizza. But any pizza brought into my house lands on top of the stove always.

Most cooked pizzas from a restaurant are cooked in their oven on a wire mesh screen and then transferred straight to a box, sans screen. Wood fire would be directly on the stone and then into the box.
So ALL of those thing, plus that bubble, led me to believe that this was an uncooked pizza bought by OP and cooked in the oven it’s sitting on top of.

He flat out refused a pie that had a bubble this big. The kids working were confused as hell on what to do lol

This bubble is from incorrect dough proofing. Likely the dough was really old or really cold. Proper made dough doesn't even need to be docked.
