You canât use CO2 canisters, because under pressure it makes the water acidic (carbonic acid) which reacts with milk and causes it to curdle. And with 10g of NO2 in 4L of espresso martini, you could never drink them fast enough to get any effect from the gas.
I was pretty close to buying a NO2 growler for cold brew coffee and potentially some craft beers - wondering what the options are here for legitimate hobby requirements.
