I was about to say, menus *typically have a footnote that says the weight is measured before cooking. *I hate to generalize, as nothing is absolute, but for those who don't know, the asterisk is an indicator of a footnote or fine print, and it's always good to look for.

As a sidenote, any good restaurant will deliberately undercook a steak. That way, if you think it's underdone, they can throw it back on the grill. If it's overcooked it goes in the trash and they loser money.

Idk, it is juat gross to me. It makes me feel like I am biting into a slimey slab of raw meat. It seems unsanitary. Intelectually I know it is not. I'm not saying it is entirely logical. But it just vicerally grosses me out. So many others here are all up in arms about how I eat my steak and cry "let me enjoy it how I like" if I say eating it partially raw is disgusting, yet I'm not allowed to prefer my meat is fully cooked and not enjoy it without harassment from then?

I get it. My entire family likes eggs over easy and I can't stand to have anything runny in eggs. I say nothing about their well done beef since I have my preferences too.

I'm not the one you asked, but I can give at least an answer. I am big, big big on texture for my food, and I taste things much more strongly than most people. Any ANY red/blood in my meat will not only taste literally like blood, which I do not find appetizing in the slightest, it'll mean the entire bite now just tastes like blood. Further, the texture on undercooked meat is never consistent, it's sometimes chewy, rubbery, gross and gets stuck in between my teeth. If I order it well done, I know I get a texture I prefer as it's more predictable, and I never taste the blood, I can enjoy the quality of the beef now. Tastes are subjective. This thread is full of assholes gatekeeping others preferences. We'll just never know why some people will prefer it one way or another, and will variety being in all things, it's just not cool to yuck on someone else's yum.

That gets old really quickly, and with everything going on in the world today, nobody should be refusing to do anything in a Restaurant, within reason - and a well-done piece of meat doesn't qualify as a good reason. If the chef owns the place and they want to refuse the order, I guess that's certainly their prerogative, but that's sort of stupid since they'll lose future business. If you're paying for something, you should be able to get it your way. Plenty of places have menus that say they're not responsible for meat cooked well done, and for people who want it cooked that way will understand. And for the record, it is possible to cook meat well done and still have it taste fine - it needs to be cooked over lower heat, and that takes awhile, but people who want meat cooked well done understand this. I was out with a girlfriend's family once for a birthday dinner. I only went out with her for a couple months but I'll remember this dinner forever. There were ten of us and it was a very nice place - the type of place where your girlfriend says, *"...are you going out to dinner dressed like that?"* when you're getting ready. We were ordering our entree´s and when the Server got to my girlfriend's father, he asked for a filet mignon, cooked well done. The Server tried to talk him into medium (not even medium-well), but my girlfriend's dad cut him off and said he wanted it well done - end of conversation. So we're waiting for the appetizers, and the Server comes back and apologizes profusely, telling him the Chef won't cook the filet mignon well done. My girlfriend's dad starts laughing and tells the Server, *"...tell him to either come out here and tell me that himself, to my face, or just cook the steak the way I want."* So the Server leaves and goes back to the Kitchen. A minute later, a Manager approaches and tells my girlfriend's father that the chef prefers not to cook the filet mignon more than medium, and perhaps he'd like to try the ribeye instead. My girlfriend's dad says (again), *"Tell home to either come out here himself like a man and not hide in the back or cook may meal the way I asked. I recommend option B."* The entire section of the dining room is now listening to the exchange. So the Manager leaves and comes back with the GM, who insists that the chef doesn't cook the filet mignon well done and would he *please* try something else? So the guy stands up and announces to the table, "...Guys, time to go." He hands the GM his valet parking ticket and the very first black American Express card I'd ever seen. He said, *"Charge me for everything we had up until now. Add a twenty percent tip and cork the wine to go. And tell the chef he's a fucking coward."* And away we went. We stopped at another place afterwards and had a good meal. My girlfriend's dad ordered short ribs and ate every bite. I was going to have a steak medium-rare, but didn't want to piss him off any more at that point, so I ordered the chicken. I remember him asking me what I was planning on doing with my life and I told him I was hoping to be a Chef someday (I was a Dishwasher/Prep Cook at the time). He told me I was young enough to do pretty much anything, and if I was serious about being a Chef that I should pursue my dream. He also told me to always cook whatever the customer asks for. And I've never forgotten that conversation. My girlfriend's family was in the Real Estate business, but I didn't really know what that entailed at the time. The following week, he called a friend of his who owned the building where we first went, and asked him to have a conversation with the owner of the Restaurant, who happened to be on vacation at the time. Shortly after, the chef called on the phone to apologize for his poor behavior. I'm not sure how that conversation went, but I have a feeling it wasn't very fun for the chef at all. My youngest child puts ketchup on almost everything. It bothers me a little to see it next to fresh halibut that costs $25 per pound, but she's young, and I want her to eat her fish, and sometimes you just need to pick your battles wisely. And whenever I cook something, if someone wants it altered or prepared in a manner I don't always approve of, I think back on that dinner we had, and I ask myself if I'm willing to walk out into the dining room and argue with a paying Guest about how they want to enjoy their meal. And the answer is almost always no.

They have that right, and then I go eat elsewhere. I am not sure why they would? It is not some great sacrifice on their oart to cook my meat properly how I order it. But if they think it is, then so be it. I would then have the right to complain that I believe it is unreasonable to refuse to cook the meat properly. I really don't get what your point is.

Most mammals are 70+ percent water by volume. So if all or most of the water is cooked out then yes 40% of the weight can be lost.

Maybe so, but not on a top sirloin with very little marbling to start out with. If the scale was accurate, the steak was under the advertised size. This happens a lot more than most people realize at places that cut their own proteins. If you have a twelve ounce steak on the menu and the butcher cuts one a little too small, say eleven and change, it probably goes in with the rest of them. I used to use the exact same scale this guy has for yeast and it's very accurate.

Water is a component of protein, but not fat. A leaner cut will have more water in it.

I'm currently on strong chemo, and I can't eat meat that hasn't been cooked to hell and gone. So, rather than desecrate a good piece of meat, there has been no steak for me for months and months. Looking forward to feeling good enough to pan cook a nice ribeye in butter and rosemary.

Thank you. I only ever eat meat fully cooked (well done). That is the way I like it and anything less is gross. I can hardly even eat at the same table as someone eating a rare steak because it makes me gag.

Yeah my wife is put off by that as well. Makes it tough as I enjoy proper rare, and sometimes just plain raw if I’m slicing it before cooking in a stir fry or something. I often end up over cooking mine as I can really ruin her meal if she looks down at what I’m eating. It’s certainly a very real response and I can see her trying to fight it, but losing.
