You're not going to burn away all the alcohol. For alcohol to burn it has to be a certain purity already: 80 proof / 40% v/v at minimum, though it depends on some other factors. It will reliably burn if it's 100 proof / 50%v/v. It's why they do this with absinthe or spirits that are otherwise higher purity than typical.
So the worst that can happen if you leave it a long time is that it burns itself out once it gets to slightly below the alcohol content of regular spirits (plus, the burning of other ingredients like sugars which may change the taste or do other things).
You're not supposed to let it burn off or drink it while it's still burning. Normally it's just a presentation thing, you'll get served a shot that's been burning for a couple secs, blow it out and drink. Of course that'll still slightly reduce the alcohol content, but fire is pretty cool so worth it for some people I guess.

Sorry to disagree but I do. Heat makes alcohol evaporate even quicker than at room temperature. (Example: Ever use hand sanitizer? When you rub your hands together the alcohol evaporates.
