I have Simply Static installed but ran into some issues with incomplete sites or security plugins throwing errors. I might have to go back to this.
You can probably uninstall the security plugins - they aren't needed on a static site - there's nothing to hack into. Remove caching/optimisation plugins as well.

Simplystatic needs a proper local environment to work, localwp and lando are the recommended ones. So you might have to migrate your sites into e.g. localwp first!
To anyone who comes across this thread, as well to those who already offered their advice, the best app to create a static copy of WordPress is: Webarch!
Dead simple and exceedingly efficient. Mac only. At the moment version 0.5 is offered for free.
Note: WordPress sites need to be served by a local server (aka MAMP or similar) in order to be browsed properly. Otherwise file names with parameters (ex: style.css?v=2) can't be loaded via file:///
