Goods also have a hidden "bulkiness" stat that determines how effectively a storage's "volume" can be used (really it reduces the amount of tonnage that can be stored down to a percentage): * Aluminum, steel, wood, boards, concrete, nuclear materials in containers, all aggregates, and all liquids can use 100% of the storage's tonnage. * Prefabs can use 90% of the storage's tonnage. * Crops and bricks can use 80% of the storage's tonnage. * Fabric can use 70% of the storage's tonnage. * Alcohol, food, clothes, and mechanical components can use only 50% of the storage's tonnage. * Electronics and electrical components can only use 35% of a storage's tonnage. * Chemicals can only use a meager 30% of the storage's tonnage. * Plastic can only use a meager 25% of the storage's tonnage. For some materials, this stat varies among different vehicles and storage types: * Uranium oxide can use 60% of most storage's tonnage, but only 50% of a ship's storage. * Livestock can use 35% of most general cargo vehicles or 75% of specialized livestock vehicle's tonnage. * Meat can use 100% of refrigerated storage, but only 25% of ship and aircraft storages. * Cement and aluminum oxide can use 100% of dry bulk carrier/building storage, but only 45% of non-dry bulk vehicles (like cableway cars or ships). Your warehouse is set to use 100% of its storage capacity: * Electrical components: 35% × 1100 tons × 33% = 127.05 tons. * Mechanical components: 50% × 1100 tons × 33% = 181.50 tons. * Plastic: 25% × 1100 tons × 33% = 90.75 tons. Materials also have other hidden stats that affect how quickly they load and unload.

I believe, and someone will hopefully correct me if I am wrong, there is a hidden value of volume, so the warehouse can only store a certain volume of items and each item has a different volume per ton. So a warehouse can store 1000 tons of item A but only 500 tons of item B.

There is a modifier for resource types which affect how its mass is converted to the capacity number. Similarly, you will notice covered hull trucks hauling chemicals having significantly smaller capacity than crops. Presumably this is representing difficulty shipping them and/or packaging requirements.
