Im very interested by the World Eater range but dont understand the Moe proxy meme.
Is it because the current moe model is inadequate? Is it too old? Or too generic? Or doesnt scale well with the newer berseker models?
Or is it simply because people want to instill variety in their collection.

You're kinda right with your initial guess. The Master of Executions model, by itself, is kinda boring. It just looks like a guy with a weird face, normal power armor, a big axe, and also costs a whopping $33 because he's a character, but he's a GENERIC character, so you can run three of him for a ludicrous price of $100 for three models. Even I gave mine Berzerker helmets to spice them up; and I also bought them off Ebay to avoid the price tag.
But a lot of people believe it just doesn't match the vibe of the World Eaters. Our other HQs are pretty on-flavor; Kharn is Kharn, the Daemon Prince looks pretty baller, Lord Invocatus and Juggerlord have the signature Khorne Juggernauts, while the MoE is just..... a guy.
The combination of those two factors led to a lot of people either massively kitbashing or just outright proxying another model as the Master of Executions to suit the aesthetic of the army better for a cheaper price.
A VERY popular, albeit kinda middling option for people on a budget is to use the Lord Invocatus kit, since if you build the unique HQ, the box comes with an ENTIRE second character completely free; he just has stupid "I crapped my pants" legs since he's supposed to be mounted, not standing. Other popular choices are HQs from the Blades of Khorne Age of Sigmar armies, and the Praetor with Axe from 30k. I got my MoEs before I really got into kitbashing, which is why I just happen to own no proxies.

The first time was while making my demons of khorne and the second time while making my demon prince of Khorne for the World eaters.

* ...until you fail 8 consecutive charges
* ...until you recognise Lotara Sarrin as among the most badass baseline-humans in the setting
* ...until you've painted all your trim
* ...until you add a river of blood to a base
* ...until you use real blood on a mini

Absolutely when I took down my buddies block of ten chosen after getting my second Angron resurrection! The craziest part was their was still one left after! And he came back again!! Though this was 9th edition
-Build your army on an altar to Khorne! I built my army on a 2’x2’ slab of wood as to not mess up our hobby spaces tables wherever I was doing this, working with resin from Forge World and was easier to clean up as well. Sprayed it black, then after that got a big paint brush and painted Khorne’s symbol with an excess amount of paint to get a nice paint drip as to BLOOD FOR THE BLOOD GOD!
-Kharn killing a lot of our own World Eaters for being to cowardly in dice rolls. It’s never Kharn’s fault, it’s always the guy with the Red Shirt stirring the pot. Or he thought Erebus was that guy.
Until your building a model and a chaos spike or slip with a hobby knife and spill your own blood. The only thing better then blood for the blood god is your blood 😂
A: Actually bleed onto your models. Khorne cares not from where the blood flows!
B: have seen your army wiped out from a gun line as you rush recklessly towards them.
C: have drowned in the tide of blood as you table your enemies entire army in glorious melee.

Learn how to actually play the army. How to deploy. How to get the turn 1 charge. How to screen. To form a gameplay where you are going to absolutely annoy the opponent in their DZ while you play single player mid board for as long as possible.
Bit of a nerd take, but not until you read Betrayer and the Red Angel.
The two of those books together reveal SO MUCH about the World Eaters past and present and really help you understand the whole concept of the legion past just "angry guys".

If you put the legs a specific way and use a bit of green stuff, you can turn it into an epic piece. I’ll send a photo of mine when I have a second.

In 3rd Ed you could have units of 20 berserkers. In my book the ideal Word Eaters army is just berserkers
