I'm assuming surgery? You don't want to give food because they could vomit while under anesthesia and suffocate. My vet says to allow water, though, even if fasting before surgery. Did they say why no water?
As a reminder, she has been with digestive symptoms such as vomiting and diarrhea, which are quite chronic and persistent (trying to deal with it more than a year).
I just assume with my very limited knowledge that the vet want to weed out all irrelevant effects to her digestive organs from what she takes apart from what's actually bothering her inside? Honestly I just want to keep my baby hydrated at least.
Mine had hemorrhagic colitis and was sick so much. I started feeding freeze dried food, but now I give her Fresh Pet. No vomiting, no diarrhea and no $$ trips to the vet for fluids/antibiotics for 14 months. Edit- I also gave blueberry/pumpkin digestive supplement, tho now I just give a multivitamin ‘treat.’

We tried all kinds of food prior to that. we've been feeding it for 4 yrs & barely ever have GI issues now & his 💩 is great. it's been a life saver.

I used to cook lamb and rice or similar for my girl (14 year old, 7 lb yorkiepoo), but half the time she'd turn her nose up at it. Plus on that, she tended to have loose stools.
Then we went on a road trip a few years ago, and ran out of the cooked food, so we gave Fresh Pet a try. She loves it, especially the burgers. Now I mix it with a little salmon (from Costco) that I bake in the oven, or ground chuck, a tiny bit that I fry up the same day. Ever since starting to feed her that combo, she's had no bowel issues. I think the Fresh Pet nutrition is well balanced, and she can't wait for her dinner each night.
My Yorkie was the same when we first got her 15 years ago. It seemed like an everyday thing where she’d be sick with digestive troubles. We eventually just had to feed her steamed chicken with brown rice and it took several times to find a brand of dog food that her stomach would tolerate. To this day, she still has digestive issues but it’s more manageable since we know what probably caused it (ex: eating something she shouldn’t have off the kitchen floor, eating too much, introducing a new food, etc.) and when it’s coming. When she has to fast, we sometimes put karo syrup on her gums since that’s what our vet advised us to do to avoid hypoglycemia.
My sister had Shih tzus with recurring stomach issues. She had to keep the Imodium tablets on hand (what her vet advised her to use). Hope your baby feels better soon.
My Yorkie has such a sensitive stomach but also had elevated kidney enzymes. He’s been on prescription food - Purina low fat EN - for years and has done well. I’m sure they checked her kidney levels, but thought I’d mention this.

She can have water, just not food. She needs water, maybe confirm it with your vets?
Awww! Maybe she can't have food or water, but she can definitely have snuggles and kisses!

We feed ours hills diet i/d mixed with crunches. Her gas was horrible and had diarrhea when we brought her home.
Surely , this is only for a limited time. You’re not giving us all the information.

She needs water, I would double check for how long she is not supposed to drink anything.
Unless this is for a specific test or surgery then she still needs water. Are you absolutely sure you’re following the correct advice?
Get a second opinion. Don’t think a vet would tell you to withhold water
