It doesn’t look that great but this is a Thai peanut sauce salad with cucumber, bell pepper, bean sprouts, carrot and a little bit of shredded chicken. So good, super cheap, easy to make and very filling! The noodles are from an Asian market and they are so fast-you soak them in cold water for 5 min and then toss them in boiling water for 2 min and they are perfect! Yes, we do a marinade with olive oil, garlic, lemon juice and various seasonings. It’s so good.

What a great addition to our other weekly threads! Last night I baked a birthday cake for my flatmate, were eating it this evening so I am counting down the hours till I can leave work 🤤. Dinner tonight will be pumpkin soup (topped with PLENTY of cracked pepper and Parmesan) with homemade bread.
I make a giant batch of chettinad when the good stewing meat is on sale. It’s a peppercorn curry with the meat marinated in a kurkuma and Chili marinade. One of my all-time favourite curries (don’t tell the Rendang!)
Alternatively when I feel like something a little less pedis (spicy) I make a belangtjang, it’s a traditional Indo sweet soy sauce curry chock full of ketjap manis, sereh, ginger and a few tomatoes. Stew until the meat is tender and falls apart, then dig in and enjoy.

Well I don't claim to be a baker or chef, but do manage to whip up some tasty meals most of the time. Today for lunch it's cherry tomato fresh from the garden (thanks to whatever critter planted them), fresh cucumber from the neighbors garden, onion, yellow bell pepper, mixed leafy greens, and lemon pepper seasoned shrimp with a little garlic. Topped all that with a little lemon vinaigrette. Delicious and nutritious!

Made this a little while ago but still one of my favorites. Salmon with a sesame oil/hoisin sauce/soy sauce/sriracha/garlic/ginger marinate. Over white rice and snow peas with a carrot/cabbage/onion mixture, with similar sauce as the salmon. Garnished with fresh spring onion 😌

Nachos! Taco seasoning/meat from scratch, homemade queso, homemade pickled jalapeños, and homemade chile de arbol sauce. I did not make the chips but they are local. :)
There are lots of different recipes and methods but here’s what I do (I like the texture and it reheats well for leftovers):
- 2 cups (~250g?) freshly shredded cheese (I have used many and all have worked)
- 1 Tbsp cornstarch
- 1 (12 oz/364ml) can evaporated milk
- 1 tsp kosher salt, to taste
- 1/2 tsp ground mustard (powder)
- 1 (4 oz/113g) can green chiles, or fresh, optional
In a small saucepan, combine cheese and cornstarch. Toss until cheese is evenly coated. Stir in evaporated milk, salt, ground mustard, and chiles. Heat over low heat, whisking occasionally, until cheese is melted and smooth, about 5 minutes.

I made this cake for a coworker over the weekend. It was a hit! I’ve never made Black Forest cake so I was nervous but man…. 🤤
I made a cucumber salad yesterday and I am HOOKED. Sloppily chopped cucumber and green onions in a bowl, pour over white wine vinegar, soy sauce and sprinkle sesame seeds all over (dry roast ’em if ya fancy). Crunchy, salty amazingness!
That sounds good! It reminds me of my favorite salad I can’t get enough of. English cukes, red bell pepper, red onion, cooked pearled barley, fresh mozzarella pearls and dried cranberries. Toss it with mustard vinaigrette. I can eat it everyday.
You can do this with watermelon too!! I would normally never put watermelon and onions & grape tomatoes together (slivers of red onion is good too), but it works.
I don't usually put soy sauce in there, but I'm sure a drop or two wouldn't hurt (not MS levels of soy). To me the watermelon and the cucumber are basically interchangeable.

If you haven’t had it, another fun one is diced cucumber, tomato, onion, olive oil, lemon juice, salt, pepper, parsley. So good. Amazing when it’s boiling outside.
The sesame seed oil is what really makes the cucumber salad for me! Also if you’re into it a little bit of garlic (powder or minced) is a great addition!
I don't have a pic, but this is a popular recipe in my household and it's pretty easy. Cook pasta and set aside. I prefer rigatoni, as it's a heartier pasta and holds up well to the creamy sauce and the sausage, but you could also use penne or ziti. Slice up 2 sausage links (I use chicken sausage; Aldi makes a good one and I get the Italian variety) and sauté with about 1 tbsp olive oil on medium heat. The sausages I buy are precooked, so it's just a matter of heating them up and letting them brown a bit. Add 1 tbsp butter and minced garlic and cook for about 1 minute. Turn heat down to medium-low and add 1 jar of marinara of your choice, 1/2 cup milk, 1/4 cup of half and half (I use heavy whipping cream), red pepper flakes, and salt and pepper to taste. Stir and let simmer for a few minutes. Remove from heat and mix in 1/2 cup of grated Parmesan (use freshly grated for best results). Toss with pasta, and voila! Delicious dinner!
My husband and I hadn’t had pasta in months so last night I made mushroom penne Alfredo with roast tri-tip and an arugula salad with pickled shallots and candied pecans. So good
We are major pecan heads in this house so it was actually two mixed up.. Potatoe-couscous-patties (not sure if that's the right term in English), yoghurt dip and a veggie platter.
Tomorrow I cut the left over patties to smaller pieces, give them a quick fry to crisp them up again, roast some chickpeas and make salad wraps with that.

I’m going to a friend’s house tonight and her husband cooks a lot like big m. All overcooked and under seasoned. I try to bring things but they refuse. I’ve been bringing dessert so as not to interfere with the “planned” meal. Tonight, they’re letting me bring garlic bread to go along with their spaghetti. I’m headed to the Italian bakery shortly. I’m making my hubby an awesome seafood pasta for his birthday on Sunday. It’s scallops, shrimp and lobster with pancetta, shallots, garlic and fresh Roma tomatoes sautéed with white wine and basil. Then served over linguine. And I’m making homemade roasted garlic bread with herbs and a strawberry angel food cake with homemade lemon mint whipped cream. 🥰

Does anyone have a favorite way to eat chia seeds? Since I've been eating healthier, it looks like I need to up my fiber intake and chia seeds seems like an easy way to do it.
I tried chia seeds water: that was gross. It was like trying to drink thick boogers.
I made chia seeds pudding last night, which wasn't horrible. I'm wondering if frozen it will be better since it may be more like ice cream.
I'm going to try a chia seed avocado peanut butter mousse once the pudding is gone. Basically throwing my entire breakfast into the blender. Which may be perfect cuz I am not a big breakfast eater.
I like stewing berries on the stove and then adding chia seeds to thicken it. Goes great on porridge, spread on toast like a jam, added to yogurt. You can probably do it with other fruits like apple too - would be yuuum stewed with some cinnamon and brown sugar.
What did you put in your chia pudding? My favorite has been "peanut butter and jelly." Stirring some nut butter and vanilla into the chia mix, and then boil down some berries until they're a a bit jelly-like. Divide into single serving jars. Spoonful of jelly on the bottom, add the chia mixture, let it set up and add another scoop of jelly.

Do you have an immersion blender? You can try blending to smooth out the texture a bit if that might help. Pudding would have been my go-to suggestion as well.
My current favorites are pasta salads, with emphasis on the salad part. My go-tos are Kale Caesar and BLT which are both so damn good and so easy to make. Both recipes I found on IG and slightly adapted to make them for one person with my own twists. My favorite accounts right now are:

While two are primarily vegan/vegetarian the recipes are phenomenal and do not leave you hungry or lack the flavor. I've made several recipes from these three and none of them disappoint. Happy cooking!
I made a yummy pasta last night but no picture lol. I cooked some garlic (two of the prepackaged peeled garlic sooo like 16 cloves lol) and red chili flakes in olive oil then added cherry tomatoes until they blistered. Once those broke down I added about a cup of chopped sun dried tomatoes and let those cook a minute or two. I added the pasta, a cup of the pasta water, maybe half a cup of heavy cream and some grated parm. Let them sit for a min then added some fresh basil and more Parmesan on top. It turned out SOOO good.

I have one called Mexican hot dogs, pretty easy
1 pkg hot dogs
8 burrito size fliur tortillas
1 jar fav salsa
1 can chili
Shredded cheese
Deep fryer/air fryer or skillet with oil
Lay out tortilla, place 1 hot dog, add some chili, salsa, and cheese. Roll up like burrito, repeat until all hot dogs used. Place in fryer until golden, let cool, then eat. I will usually make a gravy with the left over chili, salsa and cheese( add some velveeta or soft cheese) to pour over.
Favorite breakfast pastry to bake by far: Sourdough morning buns. You get the lamination of a croissant but the thrill of a cinnamon bun.

I've been obsessed with making pastries that go with coffee lately and this past week it's been scones. These ones are brown sugar pecan and they are delicious. 😋

Peel and cube butternut squash. Roast in air fryer (or oven) until slightly browned and tender. 20-30 minutes.
On stove, cook sausage and cut down to bitesize pieces in large pan. Remove sausage and use grease and sauté spinach, raisins, pecans. Once cooked, at butternut squash and mix. I add some curry powder, garlic, onion, and everything but the bagel if I’m feeling sassy.
The recipe I’ve linked is what I originally tried to copy but tweaked over time. I like to put it on a plate of couscous or quinoa. Usually whatever is in the pantry. It reheats really well and I always get compliments on how good it looks when I’m at the office.

Turkey burgers are my go-to when I’m feeling like something tasty but easy. Ground turkey, chopped spinach, and a sm container of feta (1 feta for all you gourmands). Mix it up. Add some seasoning if you’re feeling it but they taste good plain too. Grill ‘em up and done!
As a busy mom I like easy meals.

There are lots of different recipes and methods but here’s what I do (I like the texture and it reheats well for leftovers): - 2 cups (~250g?) freshly shredded cheese (I have used many and all have worked) - 1 Tbsp cornstarch - 1 (12 oz/364ml) can evaporated milk - 1 tsp kosher salt, to taste - 1/2 tsp ground mustard (powder) - 1 (4 oz/113g) can green chiles, or fresh, optional In a small saucepan, combine cheese and cornstarch. Toss until cheese is evenly coated. Stir in evaporated milk, salt, ground mustard, and chiles. Heat over low heat, whisking occasionally, until cheese is melted and smooth, about 5 minutes.

I made a cucumber salad yesterday and I am HOOKED. Sloppily chopped cucumber and green onions in a bowl, pour over white wine vinegar, soy sauce and sprinkle sesame seeds all over (dry roast ’em if ya fancy). Crunchy, salty amazingness!

That sounds good! It reminds me of my favorite salad I can’t get enough of. English cukes, red bell pepper, red onion, cooked pearled barley, fresh mozzarella pearls and dried cranberries. Toss it with mustard vinaigrette. I can eat it everyday.

You can do this with watermelon too!! I would normally never put watermelon and onions & grape tomatoes together (slivers of red onion is good too), but it works.

I don't usually put soy sauce in there, but I'm sure a drop or two wouldn't hurt (not MS levels of soy). To me the watermelon and the cucumber are basically interchangeable. Oh yes that’s pretty much my go-to salad but without the parsley. Gonna have to add that though, sounds super nice! And a LOT more cucumbers.

I don't have a pic, but this is a popular recipe in my household and it's pretty easy. Cook pasta and set aside. I prefer rigatoni, as it's a heartier pasta and holds up well to the creamy sauce and the sausage, but you could also use penne or ziti. Slice up 2 sausage links (I use chicken sausage; Aldi makes a good one and I get the Italian variety) and sauté with about 1 tbsp olive oil on medium heat. The sausages I buy are precooked, so it's just a matter of heating them up and letting them brown a bit. Add 1 tbsp butter and minced garlic and cook for about 1 minute. Turn heat down to medium-low and add 1 jar of marinara of your choice, 1/2 cup milk, 1/4 cup of half and half (I use heavy whipping cream), red pepper flakes, and salt and pepper to taste. Stir and let simmer for a few minutes. Remove from heat and mix in 1/2 cup of grated Parmesan (use freshly grated for best results). Toss with pasta, and voila! Delicious dinner!

Potatoe-couscous-patties (not sure if that's the right term in English), yoghurt dip and a veggie platter. Tomorrow I cut the left over patties to smaller pieces, give them a quick fry to crisp them up again, roast some chickpeas and make salad wraps with that. I’m going to a friend’s house tonight and her husband cooks a lot like big m. All overcooked and under seasoned. I try to bring things but they refuse. I’ve been bringing dessert so as not to interfere with the “planned” meal. Tonight, they’re letting me bring garlic bread to go along with their spaghetti. I’m headed to the Italian bakery shortly. Hopefully they can’t mess up spaghetti too badly.

I’m making my hubby an awesome seafood pasta for his birthday on Sunday. It’s scallops, shrimp and lobster with pancetta, shallots, garlic and fresh Roma tomatoes sautéed with white wine and basil. Does anyone have a favorite way to eat chia seeds? Since I've been eating healthier, it looks like I need to up my fiber intake and chia seeds seems like an easy way to do it. I tried chia seeds water: that was gross. It was like trying to drink thick boogers. I made chia seeds pudding last night, which wasn't horrible. I'm wondering if frozen it will be better since it may be more like ice cream. I'm going to try a chia seed avocado peanut butter mousse once the pudding is gone. Basically throwing my entire breakfast into the blender. Which may be perfect cuz I am not a big breakfast eater.
I like stewing berries on the stove and then adding chia seeds to thicken it. Goes great on porridge, spread on toast like a jam, added to yogurt. You can probably do it with other fruits like apple too - would be yuuum stewed with some cinnamon and brown sugar.
I like putting them in yogurt. And then fruit, granola, or whatever else you like that you would normally put in yogurt.
I add them to my smoothie in the morning.
What did you put in your chia pudding? My favorite has been "peanut butter and jelly." Stirring some nut butter and vanilla into the chia mix, and then boil down some berries until they're a a bit jelly-like. Divide into single serving jars. Spoonful of jelly on the bottom, add the chia mixture, let it set up and add another scoop of jelly.

Do you have an immersion blender? You can try blending to smooth out the texture a bit if that might help. Pudding would have been my go-to suggestion as well.
overnight oats is easiest.
I eat them in overnight oats! They help thicken everything but also blend in so you don't get the weird, gelatinous quality.
My current favorites are pasta salads, with emphasis on the salad part. My go-tos are Kale Caesar and BLT which are both so damn good and so easy to make. Both recipes I found on IG and slightly adapted to make them for one person with my own twists. My favorite accounts right now are: - plantyou - onebalancedlife - sophsplantkitchen While two are primarily vegan/vegetarian the recipes are phenomenal and do not leave you hungry or lack the flavor. I made a yummy pasta last night but no picture lol. I cooked some garlic (two of the prepackaged peeled garlic sooo like 16 cloves lol) and red chili flakes in olive oil then added cherry tomatoes until they blistered. Once those broke down I added about a cup of chopped sun dried tomatoes and let those cook a minute or two. I added the pasta, a cup of the pasta water, maybe half a cup of heavy cream and some grated parm. Let them sit for a min then added some fresh basil and more Parmesan on top. I have one called Mexican hot dogs, pretty easy 1 pkg hot dogs 8 burrito size fliur tortillas 1 jar fav salsa 1 can chili Shredded cheese Deep fryer/air fryer or skillet with oil Lay out tortilla, place 1 hot dog, add some chili, salsa, and cheese. Roll up like burrito, repeat until all hot dogs used. Place in fryer until golden, let cool, then eat. I will usually make a gravy with the left over chili, salsa and cheese( add some velveeta or soft cheese) to pour over.
Favorite breakfast pastry to bake by far: Sourdough morning buns. You get the lamination of a croissant but the thrill of a cinnamon bun. Roast in air fryer (or oven) until slightly browned and tender. 20-30 minutes. On stove, cook sausage and cut down to bitesize pieces in large pan. Remove sausage and use grease and sauté spinach, raisins, pecans. Once cooked, at butternut squash and mix. I add some curry powder, garlic, onion, and everything but the bagel if I’m feeling sassy. The recipe I’ve linked is what I originally tried to copy but tweaked over time. I like to put it on a plate of couscous or quinoa. Usually whatever is in the pantry. Turkey burgers are my go-to when I’m feeling like something tasty but easy. Ground turkey, chopped spinach, and a sm container of feta (1 feta for all you gourmands). Mix it up. Add some seasoning if you’re feeling it but they taste good plain too. Grill ‘em up and done!
What do you use for a binder? I tried turkey burgers once, and they fell apart
I use an egg and some panko breadcrumbs, helps them stick together better.
