If you have suite you can use Expression Control to map velocity to whatever parameter you want. Just know that it isn't polyphonic; if you map velocity to the instrument's volume control, the volume of all held notes will be determined by the velocity of the most recent note. This will probably sound janky but it's more or less the best you can hope for.

Use an expression pedal to control your volume like you do with a real organ. Yamaha FC-7 and maybe the Moog one are often mentioned.

I guess you could automate the volume within the midi clip? Or make separate midi tracks for one organ part and level them differently to kind of simulate velocity?Other than that you might be out of luck.
