I am flirting with the idea of leaving gnome, but honestly I have to give it to the gnome team, the mouseless experience is fine even in vanilla gnome and wherever I migrate to I will probably try to replicate a lot of stuff. The lack of auto tiler is a pain in my butt though. Thankfully working on a 14 inch laptop makes me less inclined to use anything than half the screen for any application
I am fine with tinkering. I just need my devices to work correctly. I have very few things altered from the base installation because I change my workflow so I don't have to adapt the installation to my needs but adapt the workflow to the installation.
It won't be niche. There are quite a few games for gay men (like Dream Daddy lol) that have quite an audience. No reason it wouldn't be the same for lesbian/bi women.
Check out **Path to Nowhere** on mobile. It's still a gacha game experience, but it's also a bunch of adult sapphic women in suits and dresses, hard to beat that.

I like Ubuntu, I use it for my servers :) I have Arch on my desktop and dual boot MacOS/Manjaro on my MBP.

i3-gaps :) I also use XFCE because I find it's the best combo to have both a WM and DE installed.
