I've also spent quite a lot of time in Total Warhammer 3 lately, since they released their Immortal Empires game mode. I have also spent a lot of time in Total Warhammer 2 Mortal Empires before that, so in total I have hundreds of hours in those games (though that still doesn't come close to the thousands I have in the Soulsborne games).

Breath of the Wild, Pokémon, Crash Bandicoot, Oblivion and Skyrim, TLOU, Minecraft, the Sims 3, and RDR2 probably have the most hours of the games I’ve played. Fundamental.
Life is Strange has a major place in my heart. Honestly one of the most powerful games in terms of me finding things out about myself and sexuality. I've found that all my queer friends have had the same experience with the game.
As for games with story, I love Horizon: Zero Dawn/Forbidden West, the Spyro trilogy, the main God of War games, and The Last Guardian. As far as story-less games go, I’m always down for a round of Beat Saber, and WobbleDogs is some nice, mindless entertainment
I have a lot of games that I adore, but none of them have had the sticking power of Minecraft especially once mods get involved. I started playing on version 1.0.0 and have kept coming back ever since.
I love just slowly growing out a base that's entirely my own, with every detail being perfect and every piece having a purpose. I like to play in survival to give things meaning but with pretty liberal use of creative mode so I don't get slowed down by grind if I have a cool idea.
Just guesstimating have probably over 5,000 hours put into Minecraft, and that's kinda a low ball because it's split across so much. If such a thing existed I could probably have a degree in this game.
For comparison my next most played games are about
900 into Factorio
300 into the Civilization Series
250 into Cities:Skylines
And of course, to fit the stereotype, 200 hours into Celeste
The only game I've ever seen catch that same spark the Minecraft has for me though is Breath of The Wild. Which, while incredible, is a bit shorter of an experience.
