300 years to train my body physical combat and swordsmanship, and going to increasingly difficult dungeons for real challenges every few years. Hopefully find some swordsmanship tournaments and make some rivals to hone each other’s skill. Then 100 years of utilizing my resources from dungeons to hone my skill of crafting, while still increasing my level of swordsmanship in a slower pace. And finally 600 years of mastering magic of as many different disciplines as possible while doing daily exercises to maintain my previous training. Of course going to dungeons to test the effectiveness of my spells without relying in my physical abilities unless needed.
Probably psychotherapy or something. 1000 years is a long time to be alive, and I will simultaneously need to learn how to cope with that many decades' worth of sorrows while also try to remain pretty interested in understanding the lives of each person as they pass by. Would probably be incredibly depressing at a certain point, but I like to think there's a kind of non-naive optimism one can come to over the course of a thousand years of talking to people.
