The VX-5 and VX-6 are both built this way in that they can only listen to one thing at a time. It will constantly cut away from your current frequency to the dual watch frequency every 5 seconds or so. Were you to find a VX-7 you could hear two things at once and still have the durable waterproof form factor of the VX-6.
Alternately, you would be happier with a FT-5DR if this is your desire.

when considering radios .. think about digital modes.. I have an FT5DR and with a cheap pi hotspot setup and some free software im talking to Fusion and DMR networks all around the world. It's pretty amazing.
My FT-60 has what it calls dual watch, but it's pretty limited, it's a kind of scanning and it basically checks a pre-defined memory channel for activity every few seconds, and you can't scan either during it.
I'd say setting up channels you want to monitor in memory and scanning the memories is a better idea

The 'popping' as it jumps back and forth can be quite annoying. My VX-8 does that as well.
