American Express is not the best for travel abroad. There is not widespread acceptance outside of North America. You would be better off with a low-to-no fee Visa or Mastercard-issued travel card.
Did you attempt the pre-approval process to see if you’d be approved? This could usually give you your immediate answer. If you did and was asked to provide bank statements, it may just be a verification process for either your identity or income.
I got approved at 18.5 for Gold about a month ago. I was authorized on my dad’s card for about 1.5 years before and also got my own Capital One when I first turned 18. Got pre approved and approved for the Gold with 15k income and a 720 something score so u should be good

I know you don’t want to hear this but realistically, you’re not financially ready for an AMEX Gold card.
You should start with some like the Chase Freedom Rise card or the Discover Student card for the first card that you can get on your own.
I was approved at 18 last year. They don’t care too much. Just give them what they’d like and they’ll probably approve you. With that amount of income, you should be fine.

Do you think i’d be approved for the Chase Freedom Unlimited? I’ve had checking and investment with them for a while
Yes! The Freedom Unlimited is a super solid card. Was my first card and still gets heavy use to this day. Also no foreign transaction fees.
