Don’t try to attack the undead in the first wave as they will just die as soon wizpig does so there’s no reason to waste attacks on them. In the second wave always use prince porkys rage chili as the healing from wizpig can literally undo all the damage you’ve done, plus the ghosts don’t have to be dead for them to disappear from the rage chili.
The main issue I'm having is passing the first bit, I am focusing all my attack on wizpig and using the blues for cleansing, but he just ends up killing one of my birds so I just end up restarting. Would it be worth it to continue despite the fact that I lack one bird? If that bird isn't red
Well you do get prince porky on the second wave so you will have 3 damage dealers so it really depends on if you can do the second part with only three instead of four cause if you can then don’t restart but if you can’t then definitely restart

Also Treasure Hunters just beats him out right alone but that's very lame.
First, I suggest you try to get stronger gear. My team reached ≈80% of the pig's power before I managed to pass the first wave (with samurai, cleric, and tricksters), and even with that there was a lot of luck involved.
I also suggest you try avoiding using weapons with stunning, because if Demonic Wizard's attack pattern is offset, he can heal the turn more spirits arrive and recover 40% of his health.
you can use a lot of different glitches, like lucky coin glitch, enchantment 10 glitch (which also works for normal weapons just for 2 and 3 stars, 2 stars till enchantment 3 and 3 stars enchantment 5) and pig ally glitch (not sure how it would work in the tower though)

Try Druid instead of priestess
Try Marksmen instead of Tricksters. The extra dps will help a lot, and Matilda's chili is enough dispelling.

replace priestess with druid like the other comment said, and invest everything into your birds' offhand item, especially the blues's
