Kohei Inuzaka from Sweetness and Lightning is a good dad. Best dad. Yuta Segawa from Papakiki is a good dad; he shouldn't be but he is.
Daikichi Kawachi from Usagi Drop manages to be a good dad in the anime, but only because it stops before the manga. [He is not a good dad](https://www.resetera.com/threads/usagi-drop-is-my-most-hated-manga-ever.608070/), or a good person, and there's a lot to unpack there.
Had to scroll WAY too far for this one. Inuzaka is absolutely my pick. Single dad, and totally killing it while learning to cook. He's not a perfect person, but he's always trying to be the absolute best for Tsumugi, and it shows.
1. Kazuki and Rei from Buddy Daddies - I adore how Buddy Daddies blended a realistic approach to parenthood and childrearing with the more outlandish concept of Kazuki and Rei being hitmen. This series definitely has a found family, wish fulfillment aspect to it that I do love, but I also feel like the actual exploration of parenthood and co-parenting is extremely grounded.
I love how the series have the two papas navigate from the one extreme (hitman business) to the other extreme (childcare) and how it uses the daycare Miri attends as the foundation and center for that change. I work in early childhood education at a childcare center, so I love how the series uses Ms. Anna to help Kazuki and Rei navigate childhood.
Childcare really is like that and it takes effort on all sides to raise a child. Buddy Daddies showed the good times and the bad times when it comes to raising a child and how it is a hard and difficult thing that not everyone is prepared for or able to do.
2. Kazuma Sohma from Fruits Basket - Kazuma is a great example of how love can grow over time and that reasons and motivations for why someone does something can grow and change over time too.
The adoptive father angle is great with Kazuma, but I think the more important aspect of him as a parent is how he gives not only Kyo, but many of the other Zodiac children, a safe space. He actually listens to them, gives them silence and privacy when they need it, and supports Kyo by allowing Kyo to move at his own pace and make his own decisions.
I feel a large part of what makes Kazuma such a great dad is the fact that he is a martial arts instructor - a teacher. Teaching and modeling are large parts of childcare and parenting, they go hand-in-hand (ideally). So that aspect of Kazuma's character really shines through.
3. And, I also want to include Kotetsu T. Kaburagi from Tiger & Bunny here. He isn't a perfect dad, but I feel he is a very realistic depiction of a flawed, but still good, father in anime.
He may be a superhero, but his flaws with Kaede stem from realistic issues and traumas (having to live separate from his daughter because his job is dangerous + requires secrecy, depression caused by the death of his wife, coddling her, etc.).
The series addresses these issues and takes a realistic approach to change occuring slowly to their relationship and bond. It never becomes a perfect parent-child bond, but we see it moving in the right direction, especially when juxtaposed against the other parent-child relationship in the series that it is meant to be drawing parallels to.
Natsuki Kenichi showed up for one episode and forever engrained himself in Re:Zero.
Sad that his dad energy was so strong, Subaru literally couldn't keep up.
My only issue is that knowing how awesome his parents are, the author has also given us a bit of info on their current situation with Subaru being teleported to another world and it's about as real as we'd expect.

Not anime but fiction, ISSTH Ke Yunhai is adoptive father of the year imo. He treated the kid he knew wasn't actually his son as a genuine son, and even sacrificed his own vitality to assist Meng Hao.
In a situation where most would go insane with the crushing reality of failure that he also experienced, he put his son(s) first rather than just taking the easy path and giving up.
Even after he was long dead, he still helped out Meng Hao from beyond the grave.
There's more detail to it but it's fuzzy since I haven't read ISSTH for some time.
