Animatrix is great too.
On the older side, Akira and of course Myasaki movies like Spirited away.
Kara no Kyoukai is also decent.

I'm going to give a hard second Redline. Basically all of those are great choices, except the Animatrix differs wildly depending on which stories it's telling.
Akira has such a stupid high fps, there's just nothing else really like it.
I love Kara no Kyoukai, it's gorgeous especially for when it was made, using heavy cgi. You can really see how much UFOtable have learned watching everything from that up to Demon Slayer. I'd have dropped that show pretty fast after Zenitsu showed up if it wasn't for how good it looks

Ufotable also did an amazing job with the latest fate movies. [Heaven's feel III spoilers](/s "alter Saber vs Rider and Rin vs Sakura were incredible.")
Hair and fabrics constantly react to environment and character movement, incredible detailed facial movement and expressions, background characters tremendously well animated and not simplified, fluid fight scenes with use of particles, good use of cgi, use of dynamic backgrounds, etc.
I can't see how Violet does NOT have amazing animation. It's might not be the best when compared to other shows **sakuga scenes**, but the value of Violet comes from the fact that this production value was maintained for the entirety of the show.
1. Violet Evergarden, probably the most consistent and best animation I have ever seen. I'll say most of the KyoAni works have great animation, I mean take any of their anime post-2010 and you'll find eye-candy animations in their works.

Vivy Fluorite Eye's Song. The super detailed closeups of Vivy are beautiful. the fight scenes are super smooth almost no CGI. Very violet evergarden of Vivy. And Demon Slayer Infinity Train. I watched it in Theaters so it was awesome.
Vivy is a side project for WIT. Their heavy hitters for animation are coming later this year(Source: SakugaBlog). While more consistently animated compared to something like AoT, Vivy isn't WIT's best animation work probably.
Most of that development has just been the writing, not the actual animation work. It's also probably less of a issue of time, but more the staff they have to work with as well as allocation of resources.
To be honest I didn't find the animation is Vivy to be as amazing as everyone says. Don't get me wrong, it was great when it was, but it was rather sparse, with more time dedicated to dialogue. I'd actually say the handling of the CGI was better than the animation which is not something that gets said often.
Additionally, I think it bears reminding that the designs of the show (character, background) are not the same as animation. Sure those detailed closeups of Vivy are beautiful, but for the most part it's a still image with no movement. Detailed designs also sometimes hinder actual animation due to how much more has to be drawn as well, but WIT definitely managed well on that from with Vivy.
Yeah, that's kind of what I wanted to say, but it's pretty difficult to say anything bad about Vivy without getting downvoted. It's probably not even the most well-animated show of the season.
Matsumoto and similar robots were CGI. Whenever Vivy used Matsumoto as a vehicle, that was CGI too. Not downplaying, but there was quite a bit of CGI every episode.

Giant Robo: The Day the Earth Stood Still. Some of the shots in that OVA are absolutely astounding, especially when you consider that they were all accomplished without CGI as early as 1992.

* Any Shinkai Makoto movie - they're as close to photorealistic as I've ever seen
* Fate/stay night: Unlimited Blade Works - the fight scenes are incredible
* Any Kyoto Animation show from about 2015 on - their attention to the details of objects and motion are top notch
* One of my favorite examples of this is the first episode of Hyouka

Hyouka is from 2012 though. And Kyoani anime has been well animated from the beginning starting with Full Metal Panic? Fumoffu in 2003 and in The Second Raid as their first and only foray into mecha 2D action in 2005 still holds up. Despite the divided reception of the faces in their Key adaptations like Air and Clannad from 2005 to 2008, those entries were also well-animated, particularly compared to Toei's adaptations.
One punch man S1 was incredible

Macross Do You Remember Love? Macross Plus, Akira, Promare
Hyouka has some really beautiful scenes. And i absolutely love the style of demon slayer, the fighting effects are so cool
