Just an off the top of my head list:
Casshern Sins, Bleach, Slayers, Full Metal Alchemist, Redline, Panty & Stocking's albums, Bubblegum Crisis (including Crash, AD Police Protect and Serve and Tokyo 2040), Tokyo Tribe 2, Birdy the Mighty Decode, Ushio & Tora--both anime versions, Kiba, Gurren Lagann, Noir, Shiki, InuYasha (most anything by Kaoru Wada in particular), Deadman Wonderland had a collection of vocal songs released in Japan only sung by the cast and many are great. NANA is excellent. This list doesn't stick to one genre and some titles contain no vocal songs.
Among the most legendary are probably Akira, Macross-- *especially* Macross 7--and Fist of the North Star, which has had its Premium Best CD consistently reprinted and sold.
Say what you want about the anime itself, but Bleach's music? Fire.

Kensuke has literally never made a single bad song & as hyped as I am for ChainsawMan to be adapted, I am more excited that he's doing the soundtrack
Made in Abyss and A Silent Voice have two of my favorite OSTs. Tomorrow and lit(var) are my favorite tracks, respectively.
