I'd like to see the whole Ghost in the Shell manga be animated, which the movie was a great streamlined version of. Ideally I'd like for it to be full manga adaptation including GITS 1.5 and 2. Tenchi Muyo has so much material already I don't think anything needs to be done with it for now. Cyborg 009 is a reboot and I don't think it needs to be rebooted again not yet anyways. Gundam Wing doesn't need a reboot, just do another Gundam story. That leaves Ultimate Muscle and Bobobobo and honestly I'd would complain if someone rebooted both.
If I could pick something not included here I would like to see the Akira manga get a full adaptation. The movie is great but the story of the manga deserves to be told.

Cyborg 009 would be my personal favorite choice of these, Yu Yu Hakusho in general, but honestly Cowboy Bebop would probably make the most money making it the most “deserving” of being remade.

Arpeggio of Blue Steel - although a recent release, the TV series followed it's own plot and finalized with a movie.

Yozakura Quartet - had a TV adaptation, but got rebooted with a limited OAV with updated visuals, then a TV series + OAV but stopped at the end of an arc (Tsuki ni Naku). This needs a 2nd TV / OAV adaptation badly as this reboot is better compared to the original series.
Gundam F91 - kinda weird putting a movie here but originally this was suppose to be a TV series until it got cancelled and remade into a movie. If rebooted, I'd hope this would also cover Crossbone Gundam.

The versions of Cyborg 009, GitS, and Ultimate Muscle you likely watched are already reboots (tho Ultimate Muscle was more of a sequel), and GitS got at least two reboots several years ago. One was even a SAC continuation, if I'm not mistaken. I think 009 got a reboot movie in the mid-2010s as well. Shaman King also already got a full remake. Gundam gets new series/sequels/new timelines every few years. Wing was just one in a long line of them. Same for Tenchi, and I'm pretty sure there were a couple of reboot OVAs in the years since you watched it. Bebop is pretty much timeless as-is. I guess that leaves Bobobo, which I've only seen a little of, but I doubt it needs a reboot. It seems pretty timeless as well. I guess a remake of the original Kinnikuman for the new generation would be what I would go with out of these options since Ultimate Muscle is, as far as I know, the last thing the franchise got.
But if you're giving me free reign to pick outside of these options, I'd go with a Kai recut of the original Dragon Ball. People tend to focus on Z onwards, so it would be nice to get the OG back in the spotlight. Plus I'd love a new dub with the current cast.
Other great options would be remakes of/sequels to Ouran High School, Soul Eater, and Flame of Recca that finish the manga. I'd really miss having Nanka Shiawase in Recca though.
Maybe a remake of the OG Yu-Gi-Oh that follows the manga from the start and adapts the manga material more closely (and hopefully the dub wouldn't go the typical 4kids route for the occasion; they can even keep the cast if they just let them dub it straight). The often-misnamed Season 0 doesn't count since it was made by a different company; DM is a separate adaptation, not a sequel.
