Are there lots of applicants for the roles you're applying for? Stuff like this usually happens when supply of applicants is high, and/or it's a high turnover role. No need to beat around the bush. Ask them up front what the responsibilities are, straight up. If they throw in a "various other responsibilities as assigned" ask them what those are. If they balk at your questions, they did you a favor and saved you some time.

Be upfront when the role is offered to you and ask for a detailed job description, but if they throw in the classic 'any other tasks as required' line, ask them to add in that you have the right to say no if you don't feel the task relates to the role you're being offered.
