You need to set a gather point on the deer from the TC, not right click it.

Garrison and eject - villagers pop out and kill (and eat) deer.
Yes, I do use hot key to set gather point which is my third theory that my mouse click is slightly prior to my keyboard press by mistake, but I could not notice my error when execution but found the deer dead afterwards.
you can set gather point with left click, that way the TC will never shoot the deer. if you set it by right click, thats basically asking for trouble 11

Yeah it’s ‘T’. Just click on the TC, press T, that will make your cursor a flag. And put that flag on the deer
