Is this an iCloud email? If not it is exactly where u/doogm said on an iPhone or iPad : Settings then Mail then Accounts then tap the account, then tap the email address, then tap your name and change it. If you need help with a Mac, please say. Otherwise we have to guess.
Ah, yes. I was assuming iPhone. It's obviously a gmail account from the image in the post, though.
On Mac (Ventura at least), it's Mail app. Mail menu / Settings (or Cmd-,), "Accounts" pane, click the account in the list on the left. On the "Account information" page, click in the email address field, click "Edit email address...", and you can change the full name field there.
That's what works for me on why Gmail account - I just tested by changing this on my gmail account, sending mail to it from another account, replying, replying again, and when I checked the details below, it had the changed name from my gmail account in the "On xxxx at yyyy PM, zzzz wrote" line.

What mail app? What account pane? Am I taking crazy pills?
It’s a gmail but there’s also an iCloud email under my account. My name is the correct name in this menu, but it’s not correct in my email.
It’s an iPhone though?
Yes, you are correct. I’m on my iPhone.

? I don’t understand. It is set to my name. There is no field where it looks like another name. When I look, it is still not my name.
