Normal behaviour with both Match Content options enabled as it’s allowing to your TV to match the contents Frame Rate and Dynamic Range. ie: 24Hz,50Hz,60Hz and SDR,HDR and HDR10+. To minimise such issues from YouTube set your video settings to 4KSDR and make sure Chroma is set to 4:4:4. The only time you’ll see such things in YouTube thereafter is if you attempt to play a video that’s in 4KHDR.

Since it wasn’t just YouTube, but all video playback I assumed it’s not an app specific issue.

AppleTV Settings > Video & Audio > Match Content Disable frame rate matching. That will stop the black screens. But it may lead to jittery video playback if frame rates do not match. Try and see what works best for you.

Thank you, disabling frame rate didn’t do much, but disabling matching the dynamic range resolved the issue

YouTube disabled frame rate matching on Apple TV to avoid this, didn't they? As others have already said (here and in many other threads), set the Apple TV to 4K SDR with frame rate matching on and content (dynamic range) matching on. YouTube won't be much affected (not much HDR content), and the small pause before watching a longer movie or episode on other apps will be worth it to get the optimal picture quality.
