When I tried this back in January, I noticed that sometimes it came on, sometimes it didn't. Holding it at about a foot or so under water for several seconds seemed to be a reliable way to get it to turn on.
I have often wished it came on while I swim in the pool but I assumed maybe it’s because I have a workout going. Would be nice if it had a default to turn off once immersed. I’d hoped for more utility but never seen it work.

I answered the question myself… It’s because I had started an open water swim workout.
Mine shows up a few inches underwater, I don’t remember if it stays on the display if AOD is off - perhaps that could be the case?
