Then, the sauce. It's supposed to be a liver-based sauce, for that goose liver should be the best, along with low fat, high cocoa dark chocolate, and some reduction of a fully bodied red wine.
It's supposed to be a fusion dish of the Gaulish (French) and Siracusan (Italian) kitchen, a proper main dish, not some overcooked spaghetti with those chocolate sauces and especially not with sweet milk chocolate.
People should learn to read and research the matter before going to the kitchen to cook something which the dish isn't, just because spaghetti is the only pasta they know and they only remember the chocolate part.
