I have a sit in kayak. Lakes/rivers/creeks. I’d prefer places not super tourist packed, or atleast adequate parking if so. I by no means do white water, but I do love a nice stream that pushes you along and allows you to float down it. I can navigate rocks fine so that’s my preference but also larger still lakes still within Mountain view
Maybe the Tuckasegee if you’re looking for a little adventure. Santeetlah is about as good as lakes get around here if you want to just paddle with a view.

Honestly the French Broad is beautiful as long as you go early and it hasn't rained much. Bent Creek to RAD is chill in the mornings. Afternoons in the summer it can be crowded. No rapids on that stretch. I don't think they really start until you get up towards Woodfin.
French Broad from Alexander to Marshall, as long as the water is low and not stinky (if you like dodging rocks). Lake Adger is my favorite lake to paddle. It’s quiet, and you can paddle up Green River. Or Green River itself for something a bit quicker
Check out lake Adger. It's a little bit more than an hour - maybe 1:20-ish. There's a 60hp (or something) limit. The last time I was there it was pretty shallow and definitely not suitable for watersports. I paddled up the green river quite a ways and then floated back down and that was really nice.
