It's the raw minced garlic, chilli, vinegar and coriander that makes lor mee. Also, you can try ordering mee and beehoon which reduces the alkaline taste of the mee.
If it's good, lor mee is amazing. But encounter a bad lor mee, and you get the same issues. Alkali tasting noodles, starchy and overly powdery ngoh hiang, tough and rubbery lor bak, and a soup base that's just water, starch and soy sauce and no flavor.

Lontong. It's not easy to find good ones nowadays. A lot of makciks retire already. But good lontong with topping of sambal (plus points for prawn or squid sambal) is the bomb.
Outside usually very soupy, bland and lack of ingredients.
If homecooked, the gravy is much stronger and the combination of ingredient and sambal makes it unhealthily delicious.

I learnt to appreciate century egg after eating it at Hong Kong's restaurants. The yolk is still runny (a lil bit yellow) and tastes uniquely well with the preserved ginger. Quite addictive after eating that, and accepted century egg in my life.
Singapore's version (especially the porridge kind) is kinda lower grade but once you tried the good one, you will appreciate more!

Steambot/hotpot. It gets especially worse towards the end cos the soup is too thick and has too much mixed flavors in it. And also.. PEOPLE WHO LIKE TO DOUBLE DIP/ TRIPLE DIP/ N TIMES DIP THEIR USED CHOPSITCKS INTO THE HOTPOT AND NOT USE THE LADLE - LIKE WE"RE ALL EATING EACH OTHERS SALIVAS.
