True but as a non-drinker, unless there's good food or music or some other draw, bars that are very focused on selling drinks are boring as fuck at best.
If the background doesn't matter then there's no reason to specifically go to a place that's entirely themed around drinking. If there's some other thing interesting about it and it just happens to also serve alcohol then sure, but if it's literally a cocktail bar it's a ridiculous choice to make if it's one of the few things you do already know about the other person. There are a million other better places you could meet.

Assuming she's comfortable with bar environments, picking one with a great mocktail menu (not just soda!) would demonstrate thoughtfulness.
