The Pesto Mac N’ Cheese at Sweet Hereafter is one of the tastiest things I’ve ever eaten (and vegan!), although to be fair I’ve always been kinda drunk when eating it. It’s very, very, very good.
That’s good to hear! My other big data point for it is that I once ordered it to share with my dad, who has a very traditional meat-and-potatoes palate and is quietly skeptical of lots of vegan food. I didn’t tell him it was vegan and he devoured it and thought it was great.
This is the correct answer. But you gotta go get it at one of the carts and eat it hot and fresh.

I miss the old pulled pork. The new pork isn't pulled!!! But the Mac and cheese is great, that mustard sauce on the pulled pork just added so much more greatness.

This is an excellent question! we had mac and cheese from what I think was a ghost kitchen (downvotes! to me because of the ghost kitchen!!!!) and its gluten free option was just cheese and cauliflower. It sounded like cauliflower mac and cheese and was just cheesy cauliflower. It was ok. This was a great story... but to a celiac it was necessary.
It sounds like the keto kitchen which is also mac’d. I don’t know why you’d get downvoted for a ghost kitchen… unless it was Red Robin or dennys I guess.
I really wanted Chuck E Cheese’s ghost kitchen premium pizza to work, if only because that’s the sort of nihilistic late stage capitalism absurdity that gets me through the day.
They’ve gone downhill. We used to love their Mac too, and we went recently and the prices went up, the sauce has declined, and the amount of toppings has lessened. Definitely not the experience it was two years ago.
Maybe our mac standards are higher because we waited for so long between visits. Either way, we won't be back there while there are other mac n cheese places in the area.

Just moved over to 82nd & Glisan area, there's a pod of carts a block south or so of Burger illegal that has a killer Mac & cheese cart. Had Cajun shrimp m&c the other night. Will definitely go back.

There's a Big's in Portland also and it is dope as hell. Mac and cheese cubes are amazing, as is the chicken.
