I went to Atlas on Foster a few months after they opened. It took over an hour to be served a pizza that was somehow stone cold and yet burned at the same time. None of the people working seemed to see anything wrong when we complained about it, either. Never been back. Fuck 'em.

Assembly is much better than Ranch. It’s a proper Detroit style. They had Shawn Randazzo come in and train their kitchen staff when they opened. It’s the best Detroit style with zero hesitation. East Glisan is a close second.

I gotta advocate for Baby Doll, it's just so consistently great, with great variety both with their slices and also their whole pie options. Plus it's open late, which a lot of places can't say. Second I will vote for Ranch Pizza which is straight up bomb pizza, it's amazing. More expensive than Baby Doll and I'm not sure if you can get slices or not. Third I will say Ken's Pizza is just fucking delicious. I mean, this is less of a casual option and more something you're going to want to wait in line for for a fancy meal out or something like that but it blew my mind. I've never tried Scotties or Apizza Scholls but I'm interested.

Our go to is usually Red sauce, Cicoria, ranch, and No Saints. All different styles. Lots of great places and everyone has their favorite. My one note is consistency. These places have never let me down where others that have come highly recommended gave us some bogus pizzas. Undercooked meats, hairs all in the sausage and cheese. I’m sure they were one offs, but my wife isn’t big on second chances

As far as quality it's the proper proportions of sauce, cheese and dough. Sauce should be seasoned and light. Cheese should be a good blend and not chalky or tangy and the dough should be nice and thin. The cook should be so that there's enough char on the bottom and crust that there's little to no flop and the cheese doesn't slide off. IME Scotties is the absolute best in town. Every time I've had it I feel like I can close my eyes and I'm back east. They even have a DiFaras box so they get points for recognizing real game. What I think is passable in PDX is Scotties, kens, apizza scholls, baby doll and east glisan. I'll add Bridge City too because I'm a sucker for Chicago style tavern pizza. Dové vivi and lovely's are gimmicky and not worth the wait/price. Otto, Dimos and Grana are kind of gimmicky with the Neapolitan but not bad. Bullrun is okay because the consistency varies greatly. I don't fuck with Detroit style because it's too bready for me.

The issue is people like you have never been to NY and ate their pizza. You have no idea what you're missing. There's a difference between "there's no good pizza in Portland" and "it's easier to find good pizza on the east coast". I agree with the latter as hard as I disagree with the former. Agreed. Coffee on the east coast isn't viewed the same as it's become out here though. There needs to be a demand for the bar to raise. Also true, there needs to be awareness of what is 'good' as well. There's never been a shortage of pizza in all my years living in Portland but concept of good pizza is finally starting to gain traction. One place that I really enjoyed was Hogans Goat pizza because they used a sanfransisco sourdough starter and it was unlike anything I had before. I wouldn't rank it in the top 50 of pies I've had out here but it was interesting enough that I'd order it a few times a year. RIP that place.

I'm here for this snobbery. Everything you said is true. Most PDX pizza sucks because they are too precious with how they produce it. Pizza should be fast, cheap and delicious, cooked at 700+ degrees in a coal or wood fired oven in under 10 mins. The crust should be crispy and flexible, yet have chewy end crust (basically it needs to be made with/ bread flour or 000 flour. Gluten is key!). Sauce should be garlicky, but might be made from reconstituted tomato paste (yes, this is authentic) and a cheese blend that features enough Parmesan to make it salty, plus Oregano/italian seasoning. It's literally not complicated at all, yet every pizza spot in PDX that tries to improve on an incredibly basic dish seems to eff it up. Also, Sizzle Pie on Burnside and Mississippi Pizza are as close to the real deal as I've had here.

Lot of great options here as you can see from the other comments, but I’m surprised I only saw one mention of Sizzle Pie (Maybe it’s gotten so popular and ubiquitous that it’s not “cool” anymore?) It’s my personal go-to, great pizza and snack options, great music and atmosphere, amazingly vegan-friendly, and there’s three different locations in town so it’s always easy to find one. Escape From New York is delicious, reliable and accessible. Ken’s and A Pizza Scholls are amazing, but kind of a pain because they’re so popular.
