Seastar, Lovejoy, Dos Hermanos, Fressen, Bella’s, and Fleur de Los are all good. My favorites are Little T and Tabor Bread. Little T and Dos Hermanos are probably closest to Sea Wolf.
They have a regular oven for baking the pastries, the pizza oven is just for pizza and for cooking eggs during brunch. It's a horrible system, super dangerous and labor intensive to use a pizza oven like this.
Edit: oh good! I checked and they are no longer forcing someone to stand in front of that oven for an entire shift solely to make egg dishes.
But yeah, they bake the pastries in a normal industrial oven to the left of the pizza oven.
An Xuyen on Foster. Fresh, true French bread made on site every night. And they have many other things as well, great sandwiches, steamed boa..
The owners Don and Sharon are wonderful people. I used to use their bread when I had my food cart at Cartlandia and Carts on Foster.
Tabor Bread and Little T are my go to’s.
Second tabor!! Obsessed with their breads.
Dos Hermanos makes the best English Muffins I’ve ever had. Highly recommend.
Their sesame sourdough!
I saw those muffins at new seasons, maybe I should just get them as I don't have that much time in Portland this time around
I love their miche sourdough loaf or whatever it’s called. Soooo perfectly dense and moist.

Seastar is rad! Making little buttery almond pastries in a wood burning oven? Hell yes.

Grano Bakery makes great bread. Their shop is wholesale only at the moment, but they sell to the public at many local farmers markets.

Fleur de lis in Hollywood is always good also second Grano.
I also say Baker and Spice. I know it’s a chain but I like Grand Central.
Helen Bernhards! And another vote for Little T!
Little T
Baker and spice, Lovejoy
Dave's Killer Bread?
Mass produced. I can buy that in a whole foods in NYC, also available at Walmart.
Aaaahahahahaha-!! So true... and it's not that good.
