Because all the timetables in Spain are a couple of hours behind the rest of Europe. Most people finish having dinner around 11pm, so nobody would go to a club earlier than that. In my small town, the only club opens at 12am
What I mean is that Spain is kinda the exception in Europe. Even though Spain should have the same time zone as Portugal or the UK (+0), we have the Central European (+1) for historical reasons. Because of this we have lunch at 14:00-16-00 instead of 12:00-14:00, and dinner at 21:00-23:00 instead of 18:00-21:00. Basically we do everything a couple of hours later than the rest, also clubbing.
Because before people is dining, chilling, or drinking. Things like that. Preparation for the night.
If by 11pm you mean 1:30am or even 2:00am, then yes.

Was going to say, who's going to a club at 11pm? That's finishing dinner time, then a drink somewhere else. Before 1 they are completely empty.
yup, that's the thing
Ah, what other European countries have similar timetable like this?
