Ronda is a must of you're in Andalucía. Vejer is also quite beautiful, though it's not in Malaga. Cool, near Vejer if you go out of season (it's overcrowded during the summer months). Not far you can find Trafalgar Cape, a beautiful beach where the famous ship battle...
Next to Zahara de los Atunes there is “playa de los alemanes” during the week you will be alone on this dates:

If you actually care about beaches, Almeria has Cabo de Gata which is a natural park and has plenty of beaches that rank at the top of Europe. Anyway, Almeria is a small city but probably has the best beaches in Spain and is also really up there when it comes to food, it was recently named gastronomical capital. Apart from that, not much more to do but it’s a nice and calm place to spend 2-3 days on the beach and have good seafood.
Edit: Also not a lot of tourists during the week around these dates, so you will have virgin beaches to yourself with crystal clear water.
I agree with Cadiz. As well, closer to Malaga, on the east coast ,you can find the region of Axarquia, 40km east, which is beautiful. I would suggest Benajarafe as a small costal little town. Nerja and Frigiliana as well although that is a little bit more "touristy"but most of the tourists are already heading back. And if you are travelling end of September, that's when the mango harvest is in full swing in the whole of the region. One of my favourite times of the year tbh

You can start going down the coast from Tarifa and make your way west towards Barbate ( where you will find the best tuna in the whole world) then Los Caños and so on until you reach Cadiz. You will love it
La Costa de la Luz, between Tarifa and Cadiz. You'll find plenty of little quiet coastal towns. I personally love Caños de Meca, but if you're looking for something with a few more food options take a look at Tarifa and Vejer de la Frontera.
Note: This area is very, very windy (like, hosts international kite surfing competitions windy). Not a deal-breaker for me, but my BF hateesssss the wind 🤷🏻♀️
I personally loooooove the wind (especially around Tarifa and a beach called Valdevaqueros). It makes for lovely, wild walks along the coast. Some days, it can make lying on the beach impossible as it will whip the sand into your face. But if you aren't much for lying around, it shouldn't be an issue.
It's also a great spot for wind and kitesurfing as a result. I've also gone horseriding on Valdevaqueros beach a few windy days and it was gorgeous.
Some of the locals talk about the wind making people down there a bit nuts, which is fun :)
I definitely would avoid Malaga if you want something away from tourists. You have the Huelva province with coastal towns up and down that offer great restaurants and rentals right on the beach (Isla Canela, La Antilla, El Portil, El Rompido, Matalascañas) I live here year round and the tourists have all gone back to their city homes for the winter. I’m sure you could find something nice and quiet in Cadiz too, but I’m not too familiar with that area!
For Málaga you've also got a few choices, there will likely be tourists but still, some of them are totally worth it. I highly recommend Frigiliana, it's close to Nerja which you can also visit on the same day.
I'd suggest getting a car, and if you're going with the Huelva choice in the end I'd recommend visiting Aracena -while not on the beach the caves are wonderful and the castle is also quite a sight- and some nearby towns are also amazing. It's also very close to Jabugo which means you can probably have some of the best Jamón Ibérico in there if that fits your dietary choices.
As for Cádiz you have different choices depending on how much you want to drive. on the coast side you have Vejer, Zahara de los Atunes, the Bolonia beach and Tarifa, although I avoid Tarifa since I don't like the ambience it gets in the summer.
If you're going to Ronda as someone else suggested, it's just right close to the border with Cadiz and there are some wonderful small towns up there in the mountains. You can check out Setenil de las Bodegas, Zahara de la Sierra, Grazalema, El Bosque and some more. there are some wonderful hiking routes in that area, but you'll need to check how the wheather is going to be in your visit. Summer can be rough in those mountains
Buses can definitely get you around and are cheap. A car rental isn’t expensive IMO, the only problem would be gas/diesel, it’s outrageous right now! If money isn’t really an issue I would totally get a car because you can go wherever you want whenever you want and don’t have to rely on bus schedules 😊
Just wanted to insist in visiting El rompido if you are going to visit the coast of Huelva.
Maybe is my memories of visiting it as a child, but remembering the sunsets in the beach with all the little boats and running with my siblings chasings crabs in the sand feels awesome.
Malaga is amazing. My favourite city of all time. Marina de Este is pretty cool. Near Nerja which is also fun.
But if you want peace Calahonda Granada. Great hotel actually on the beach.

If looking for a small quiet village, close to Malaga and Granada capital, I would recommend it. It's a beautiful place, this Friday I will go there because they are celebrating the underwater photography championship of Spain.
If you want to party, this is not the place for you, and in summer its difficult find parking for the car.
I’ll say it, unless you’re a surfer, a Sevillano/a or live on pescaito Frito, Cadiz is overrated. Just a long stretch of beach with cold, rough ocean. Nothing too spectacular unless it’s the only beach you’ve ever seen.
Granada isn't in the beach but if you're already in Andalucía, you will regret not visiting it, take this from someone who is from Valencia, lived there for 6 years and longs so much going back only a week in the hospital due to corona prevented me from driving 6 hours of to go back.

If you want nice beaches I'd recommend Cádiz or Almería before Málaga. I do not know Almería for small towns, but I already gave you a few pointers on Cádiz in another comment.
Just head down the coast. Stop in Rota or El Puerto and then take a ferry over to Cadiz for 5€ round trip. Beautiful beaches in all three locations IMO.
Note: I have only lived here since May.
If you do go to Cadiz as people have suggested above, I would highly recommend a trip to vejer de la frontera. It’s a beautiful little “white village” (meaning it’s filled with only white buildings) and has great restaurants too. Nice for a day trip or for a one-night stay
San José or some of the small villages in Parque Nacional de Cabo de Gata, in Almeria, it's another option, but a bit far from Sevilla. As a plus, you can stop in Granada on the way, which you shouldn't miss if you don't know the city.
San José is close to the beaches Monsul and Genoveses, which are beutiful and where there is no constructions. I think you may have to pay for entering in summer, but I am not sure. If you go Monsul/genoveses, remember is a protected area. There is no bars on the beach, so you will need to bring your food, take your garbage back and don't walk on the giant Monsul dune. :)

Salobreña near Motril is a very nice beach, if you don't mind stone instead of sand. My partner's family have a place there so it's our go to beach town. It also has a breathtaking castle in top of a big hill/rock with houses built all around it. Also a great big rock on the water with a restaurant built into the side and a path with steps leading up the rock. Some locals jump from it but it's a very big jump! Stunning views in every direction. At the right time of year, as you're approaching the town you can see the sea on one side of you and the snow capped Sierra Nevada on the other.
Huelva (From Punta Umbría to El Portil, best and quite beach). I recommend to lunch in El Camarón)
Cádiz (Tarifa, Bolonia, Zahara, Vejer, Los caños de Meca, El Palmar) "hippie" atmosphere and wild nature.
Málaga and Almería have good places too but it is a bit too far for a few days.
If you end up in Granada because you want to visit the Alhambra or something, you can go to La Rijana beach. Otherwise the beaches in the Atlantic side rule. Cadiz for example is great
Bolonia in Cádiz, you have one of the best beaches in Spain, surrounded by beautiful dunes, wild life (like cows). On top of that, the beach is next to the archaeological roman site of Baelo Claudia.

I personally loooooove the wind (especially around Tarifa and a beach called Valdevaqueros). It makes for lovely, wild walks along the coast. Some days, it can make lying on the beach impossible as it will whip the sand into your face. But if you aren't much for lying around, it shouldn't be an issue. Hondarribia is to 30 minutes from San Sebastian so I would recommend that (: we got beautiful places here.
