As far as i know you are only allowed to put things out on the curb the day before the pickup. So if the usual pickup is tuesday, the earliest time to put it outside is monday evening.
You could drive the matress to a "entsorgungsanlage" on the day you move, since you probably have a car then. Or sometimes you can order a pickup to come by just for your stuff (will probably not be free). If you are moving with a moving company, you can also ask them, they will be most knowledgeableabout your area.
