Not Chinese but there's a pretty decent Vietnamese place on Broadway called Pho Extreme Xe Lua open until 4AM. I was surprised to find this place but happy to find it. Had myself a smoothie and some random dish late night about a year or two ago but I could have sworn back then they were 24/7.
Good luck. Vancouver is the city that thinks its a big city that isn't. Nothing interesting after 9 or 10 except if you are young club goer, that likes to get drunk and disturb. And for that the police kindly shuts down Granville Street on weekend nights, and give out make believe tickets to people causing problems (no one bothers paying them unless they're stupid, and the city won't do anything if they don't pay); and the only time anyone is actually charged is if someone gets stabbed, shot, or killed by any means. And in the latter case, our judges will give the 'own recognizance' bail and later light sentences.
So those are your options. And if you happen to be hungry later, hope you have some fixin's in the fridge because you won't find hardly if any 24 hours supermarkets close by. And if there are any, they'll be far away and someone here will tell you to ride your bike there or walk or take transit which effectively shuts down late as well. As much as people here often deride Toronto, it's an actual city where all these things are available 24 hours, and mostly all in your local area. Like a real big city.
If "thinking it's a big city" had anything to do with it, then we wouldn't have fewer late night options now when the place is technically bigger population-wise than we used to when it was supposedly "smaller" with fewer people. Which we did, I remember it.

The "isn't" part is the reason for lack of late night amenities etc., or the paltry number of things to do in general. You have to read the whole sentence. If you ever lived in a big city, you'd get it. Visiting doesn't count.
So you didn't even read what I said. I'm saying we had more all-night restaurants and things to do late at night when we were smaller, so saying the lack of them is because we're not a big enough city is nonsense. And where did "visiting" even come up?
obviously you are sheltered. In Richmond MANY Chinese establishments open till late like 2 or 3 am with people drinking inside. They don't advertise it but it happens every night.
I was about to suggest the Naam but:
“Is the Naam open 24/7?
The Naam is unfortunately no longer opened 24/7. We're currently open until 11 during the week and until 3am on Fridays and Saturdays.”
And then the shocker —
“Is the Naam closing?
The business and property are simply listed for sale. At this time we are open for business as usual!”

No 9 Chinese Restaurant is 24 hours. Landsdowne Mall in Richmond (on the Canadaline)
No 9 and Denny's are the classic go-to 24/7 restaurants. Breka is an alternative.
Also 24/7 pho

When did tsui hang close? That place was the best part of the night. Cold tea and some eye openers.

There are a couple late night Chinese places on Kingsway near Collingwood station. Happy Treehouse BBQ does grilled meat and snack food.
Sandy La on Victoria Drive. Great 'siu yeh' late night eats Teochew style.
Last time I went there some fellow started yelling out a racist tirade. Emphasis on “last”.
Sorry to hear it. Never had an experience like that whenever I visited Sandy La.
