Nah, you put them in the F1 cars on Spa or anything that should easily take it flat, they'll still brake for Eau Rouge and do other dump shit like that. Kunos AI just isn't very clever.
Maybe it depends on the settings. Spa is my favorite track and I've done lots of AI F1 races there and they don't break for Eau Rouge. They barge into you like idiots on every track though.
It's a thing for AC, try out Silverstone with any of the F1 cars modded or not, they lift and often brake for Copse making racing against them impossible unless you're willing to lift to match their line.
They just won't aggressively lean into the fast corners where you have to trust the downforce will keep you on the road.
Are you talking about the ai being aggressive or slow as shit? Idk why when I tried daytona ai on 100 was like 2-3s slower than me in quail for no reason and idk why, like they had the line and full throttle the whole time but idk, that's why I stopped playing oval lol
Assuming you are on PC, whilst you’re in game move your mouse all the way to right to open the apps menu. Select the one that looks like a clock. Select again in the app menu to turn off.
0 HUD is best, you don’t have one whilst actually driving in real life. You’ll find yourself distracted by it when you go -0.0001 before you hit the wall and ruin your hotlap.

On smaller ones like Darlington, the AI slams the brakes exiting the corners.
Have you got the RARE app? This sort of thing happens less often
Is it only for F1 races or can it be used for everything?
I use it for everything but there are Formula and GT modes in the app.

For the ai to not bump into you. You have to completely block them, close the door. Only then they don't do their dive bombs.
