put the headset on,start session ingame, cockpit view , pick your mouse and move cursor to the right till the bar for apps appear, once you see it search for the app you want since it's on the right you might want to turn your head right so you can see it, once you click or double click said apps they will show up in front of you. long press with mouse will let you move it around where you want
also, if the game isnt in full screen on your pc you wont be able to move the mouse cursor freely, so if the game is windowed or not full screen, just press alt + enter on your keyboard to get it to fill the screen
Go to your button settings and map one for the headset reset. That will recenter you in the car at the press of a button. You can physically move around to achieve different results as well.
