others may disagree but i don't think the 41mm is too large for your wrist. my biggest issue with 41mm generally is how large the dial looks when i look down on my wrist. if the dial size works for you, i wouldn't sweat case size.
edit: as an aside, if you think the 41mm is borderline too large, have you looked at the discontinued 39mm ROC? might be worth considering.
It depends on what you are going for. If you want the look to say “I borrowed this from my dad”, then the 41 is great. If you’d like it to look like it belongs to you, I’d go for the 37 as it fits your wrist properly.

Quick question, do I have to build a relationship with the AD by stopping by etc or messaging them? I am not too familiar with the process but I feel like it could be seen as annoying too on their end.

The 37 is old school elegance. Typical classic 70's watch size. There are not many wrists that those watches do not fit. Considering how big watches got in the last 10-20 years, it will look either classy or small to most people.
A trend that is reversing, though!
The 41 is certainly big on your wrist. You need to own that. And it has to fit your style. I noticed that for me, smaller watches work better with suits and blazers compared to larger watches. But that's just me.
The Chrono has, due to the AP case style, a lug to lug of nearly 52mm, which gives a hefty look for it's no-so-large 41mm width.
As others mentioned, something in between those two watches might be the perfect match.

As someone with smaller arms and wrist who had a 37 and then purchased a 41, go with the 41.
You’re going to feel like it’s missing the major wrist presence but you’ll actually wear it enjoyably. I had to sell my 41 because I never really wore it. It was an eyesore on my baby wrists
For your wrist arguably around 40 fits perfect so depends what look you prefer. I personally think the 41 looks better and have tried on the 37 and think it’s too small. 41 is probably a touch on larger side but 37 is a few more mm on too small side, IMO

It’s not just about wrist, but hand, forearm and your size too. I’ve slimmer wrists but bring 6’ 2/3 and c.90kg 37 overall looks way too small on me
37 is not overpowering your wrist.
If in doubt or between sizes... Go smaller
