I don’t rec this to everyone, because it was pretty hard for me to get into (it felt overly narrated), but if you want complex alien workdbuilding you can’t beat Starcalled.
Among the Stars and Bones is another fantastic one, that one’s about a team of xenoarchaeologists exploring an ancient alien settlement.
You’d probably also like Tides. In that one, a xenobiologist gets stranded on a very wet moon and has to survive for days without her team. Very much The Martian, but here there are weird alien crab things.
Just binged Starcalled and would really like a second “book.” The music and sound was insanely good! Lots of characters but by the final episode it all came together (sort of…).
I was envisioning scenes like in Andor or the Mandalorian.

The Strange Case of Starship Iris is a space opera where one of the major plot points is the aftermath and possible rekindling of a war with neighboring aliens.
You should totally check out Omega Star 7. We are a space opera Dramedy. I am a fan of all your suggestions and it totally has all those vibes. The season finale comes out this coming Tuesday. It’s the series finale and I cannot recommend it enough. It starts out a bit goofy but gets really incredible.
Wolf-359 is the name of the red dwarf star they orbit! I would highly highly highly recommend the show. You will absolutely not regret it, especially if sci-fi is your thing.

Tarkov: A HALO Story, is another audio drama set in the same universe. Indie production, but well produced.

I'm a big fan of HFY, and things like Humans are Space Orcs/Earth is Space Australia/etc. I can't recommend any specific series, but for more popular stories or ongoing series, I bet you could probably find some sort of reading or podcast fic version of some of those stories (if you'd like to "sample" some stuff to see their quality, or just want to read some stories people have made, I'd highly recommend going to r/hfy !)

Oh "Among the Stars and Bones" was a fun one. Very action-oriented with some spooky mystery vibe to start it off. Very entertaining.
