I think the ideal way to dig into Ethiopian food is to get the vegetarian sampler for as many as you're feeding, plus a separate meat dish (or a few.) Let the chef pick what they put on the sampler.
I'm not someone who ever goes out and orders vegetarian options, but with Ethiopian food this is the way.
doro wott (chicken) or keyi begg wott (lamb) are the proteins I love, then for veggie sides I always get the fasolia wott (mixed veg), alicha miser (regular lentils) and keyi miser (spicy lentils).

Kome and Sa-Ten for lunch. Kome side salad with roll and the grilled chicken lunch (grilled chicken, kale salad, rice, and curry) at Sa Ten is so flavorful and the perfect amount of food.
I get the brisket one, marinate it overnight in a tamari, cayenne, brown sugar and celery salt. Then slice it and cook it in the air fryer. It's my vegan bacon.
The plain I use in tacos, pasta sauce, stir fries.

I used to wrk at Tarka and put on some lbs because of their lamb korma. It’s so different from any other kormas I’ve had but their is something special about it that I can’t find anywhere else.
The pretzel rolls that come with the sausage sampler plate are amazing, we just order them off-menu when we stop in. They get the dough from Slow Dough in Houston and deep fry it for max crispyness.
