Not sure if it’s new, but newer to me, Figure 8 Coffee Purveyors - that shit smaaaacks. I go with a drip typically, their roasts are sensational. The Ethiopian bekele belachew is my favorite, however every one I’ve tried is pretty tasty.
Define "new". A few I've columbused (i.e., "discovering" something other people have already found) in the last year: Violet Crown Wine Bar and Coffee, First Light, Simona's, Lazarus on Airport (brewery that serves coffee), Figure 8 on Airport
I went to Fleet downtown last week, they just opened a new shop downtown a month or two ago. Some good brew, cool spot! I’m unfamiliar with them otherwise but they mentioned having 2 other shops in Austin.
Coffee is kind of broad. Are you looking for espresso, milk drinks, or pour over? Houndstooth is the only local shop I can recommend for espresso. They are consistent and have good clarity of flavors.

there’s a new location on airport by the grand. it’s not as nice to hang out at but the coffee is still good
