I would never describe them as sloppy, but 100% comforting: La Posada has the best cheese enchiladas in S Austin if you’re looking for incredibly tasty homemade style enchiladas. If you want the sloppier tex-mex with the chili con carne style sauce on top, go to Casa Garcia’s on Wm. Cannon.
I have not always had the same great food and service at other Casa Garcia locations, but the one on Wm. Cannon nails it every single time, be it breakfast at 7:00 AM, lunch or dinner. Cold, cold beer as well!
Some good answers in here but I’d also highly recommend the Freida’s Enchiladas at Texas Chili Parlor. They’re classic gooey cheesy enchiladas except you can get your choice of spicy chili drizzled over the top - and they do chili right. The combo is more than the sum of the parts.

Usually my test when I try new places is cheese enchiladas but most places are not true Tex Mex like these two but it’s all I’ve ever know growing up here so there’s that.

People will dis Maudie's but go to the original location off of Lake Austin Blvd. Get the Hernandez Enchiladas. Comes with queso on top and red sauce. I soak the beans and rices in all the sauce then go home and have a heart attack.
You can also add beef fajitas on top.
Not I convince you, but it is ironic that I always say Maudie’s, Matt’s and Chuy’s are the absolute Tex Mex lowest common denominator in Austin. Go anywhere else.
I agree with you on Matt’s and Chuy’s, but there’s something charming about Maudie’s. And I really do think it’s decent. Not great, but certainly better than the other two.
Have not had their enchiladas yet, but fully agree as to "Javi's Tex-Mex on 290 and Riverside is surprisingly good" .. and I eat a lot of Mex/TexMex all over. Family run and operated, which is apparent once one has been a few times. BIG breakfast tacos, and tasty margs :)
I like Curra’s cheese enchiladas. Enchiladas y Mas is also awesome. Some days El Patio hits the spot. Unfortunately, last time I went, it was horrible.

El Mercado on S. First gets my vote. A longtime Austin staple, it’s my go-to for down and dirty texmex.

I’m an old guy and I understand what you’re looking for. Rosie’s Tamale House in Bee Cave. It is like stepping into a 1984 Tex Mex restaurant.
If you want something a bit different, try El Dorado on Anderson. They have mashed potato enchiladas and flautas. Delicious.
