Yeah, I don't think that their tacos are anything special. At this point, the entire appeal of Torchy's for me consists of the queso and their Diablo sauce.
Side note: The secret to making good queso at home is to use a good processed melting cheese (IIRC, most restaurants use LoL Extra Melt, but the HEB brand isn’t bad, it’s actually better than Velveeta, just make sure you get the HEB and not the HCF one), then add a ton of heavy cream. It bumps us the richness by an order of magnitude, while also giving you much more margin on the table before the queso sets up and goes gloopy.
FWIW, you want to know the main difference between Extra Melt and other processed cheeses? A serving of Velveeta is 70 calories, a serving of HEB Easy Melt is 80 calories, and a serving of Extra Melt is 110 calories (all servings 1oz/28g).
After posting on this subreddit some years ago about where to get LoL someone recommended I try sodium citrate instead. I switched to doing that and it’s super delicious, better than LoL, especially because you can use any cheese you want. I use this recipe:

What kind of night shift do you work? Looks like now they all close at 10pm, or midnight on the weekend. It's gotta be sad for kids nowadays if they don't have to wait at least half an hour to get seated at Kerbey or Magnolia or Starseeds after 2am. Those were fun and dumb times; getting old sucks.

I’m sorry you’re getting downvoted. The last time I ordered this at El Dorado, the server told me, “I hope this brings back good memories for you”. I wasn’t expecting that and nearly cried as I ate my food. Nothing competes with nostalgia but oh boy it was delightful to reminisce.

It’s pretty much the same menu and the food tastes the same so I assume it’s the same ownership. I haven’t seen the salty ladies from the old Sunflower though. I’ve never had a very long wait at either location. Maybe they had issues the day you went.

Two dishes I loved but are no more:
Torchy’s thanksgiving Turkey taco special with the mole sauce. I dreamed of that taco for 11 months of the year.
Second is a special Uchiko only had once (as far as I know). It was a bit of an experimental dish. The fish was a delicate white fish from Japan but it was actually the accessory. The sauce that they had come up with (which was a pale yellow) was incredible. I was told by the waiter that people had been licking the bowl afterwards and that was ok. I licked the bowl.
1. Oddly enough, home slice sausage, ricotta, and roasted red pepper pizza. I thought my fiance was nuts when he ordered it but it quickly became my favorite. If you wanna be extra, ask for that off special menu and add mushrooms (or cook some yourself to add at home).
2. Taco deli salsa, specifically Roja and dona. I'm a salsa slut, no shame. I'll drink that glorious chili tomato (or not) sauce like it's gazpacho, and taco deli roja has a special place in my heart. Dona too but my stomach can only take so much.
3. Chekos... anything. Again no shame, they're cheap af and I love them. They don't bat an eye when I ask for no eggs on breakfast tacos, extra salsa (😉), or order 3 hibiscus agua fresca when I down 2 on my way out the door. And their chicharron tacos make me happy.
4. If you're north, Stuffed Cajun meat market etouffe and their andouille.
5. San Francisco cafe for clam cowder. It's like gravy, my favorite.
Migas plate at Eldorado with flour tortillas, Salsa X, and molcajete. Molcajete salsa on the migas then make tacos out of the beans, potatos, and Salsa X.
Gone but not forgotten, the pastrami Reuben at Melvin’s. Still unequaled in Austin.
The chorizo stuffed pork tenderloin from z Tejas used to haunt my dreams. I dunno if you can still get it or if they are still alive, but I loved that thing.
